75g Mooncake mould
Ingredients:
(make 14 moon cakes)
White Snow Skin :
38g Glutinous rice flour
30g Rice flour
15g Wheat starch
30g Caster sugar
135g Fresh milk
15g Canola oil/Cooking oil
Strawberry Snow Skin :
38g Glutinous rice flour
30g Rice flour
15g Wheat starch
30g Caster sugar
70g Fresh milk
65g Strawberry juice
15g Canola oil/Cooking oil
Filling :
14 Medium strawberries
200g Red bean paste (pre-made)
200g White lotus paste (pre-made)
For dusting:
Rice flour 60g
Note:
Red bean paste and Lotus paste can be bought from grocery store or supermarket or make your own at home .

In the process of making moon cakes, cover all the ingredients to prevent them from drying out.
The moon cake can be served immediately after moulding.
Or keep them in airtight containers and refrigerate for up to 3 days.
Or freeze them in an airtight container in the freezer for up to 1 month. Thaw the mooncakes at room temperature before serving.

提示:
红豆沙和莲蓉可以从杂货店或超市买到,也可以在家里自己做。

在制作月饼的过程中,将所有材料盖好,以防止变干。
月饼成型后即可食用。 或者将它们保存在密闭容器中冷藏最多 3 天。
或在密闭容器中将它们冷冻在冰箱中长达 1 个月。 食用前将月饼在室温下解冻。

Homemade Red Bean Paste
自制红豆沙

INGREDIENTS
----------------------
(Yield about 2500g)
1000g Red Beans
2500ml Water
400g Caster sugar
250g Canola oil/ Cooking oil
Note
--------
1. It takes about 40 minutes to cook red beans in a pressure cooker, and about 2 hours to cook without a pressure cooker.
2. Adjust the sweetness you want by increasing or decreasing the amount of sugar in the recipe.

Yam Paste Filling

(I made extra taro paste here to store it for later use)
800g Peeled Yam/Taro
120g Vegetable/Canola oil
200g Caster sugar
1/2 tsp Salt
This recipe only requires 640 grams of Yam paste to make 16 moon cakes

155g Cooking oil /Canola oil
1/3 tsp Salt
160g Plain flour
16g Cornflour
2 tsp Baking powder
11 Egg yolks (60-62g egg with shell each)
1-2 tbsp Orange zest
Meringue :
----------------
11 egg whites (60-62g egg with shell each)
11/2 tsp Cream of tartar
175g Caster sugar
Decorate the cake (optional)

Icing sugar

Notes:
----------
1. The best chiffon cake pan is made of aluminium with a removable base without non-stick coating.
2. Do not grease or line the baking pan
3. Make sure the mixing bowl and all the utensils for making the meringue are completely dry and grease-free.
4. Orange zest - only zest the orange part, not the white part (pith), it is bitter.
5. Carefully observe the baking process, the temperature of each oven is different.

60 Bamboo leaves
1 roll of Cooking String ( cut string into 110cm each)
Ingredients for Glutinous Rice

1kg Glutinous rice
1 tbsp Salt
1 tbsp Sugar
30g Curry paste
2 tbsp Cooking oil
Ingredients for Curry chicken
---------------------------------------------
900g Chicken thighs (cut into small pieces )
2 big Brown onions (chopped)
30g Curry paste
4 tbsp Cooking oil
1 tbsp Salt
2 tbsp Sugar
1 tbsp dark soy sauce
To boil zhongzi
------------------------
Boil zhongzi in a big pot of water.
Add 1/2tbsp of salt into the water.
Water should be enough to cover all zhongzi
Close the lid, boil the zhongzi over medium-high heat for 2 hrs to 3hrs .
If you use a pressure cooker to boil zhongzi, boil for about 40 minutes.

用一大锅水里煮粽子.
在水中加入1/2汤匙盐.
水应该足以覆盖所有的粽子. 盖上锅盖,将粽子用中高火煮2-3小时.
如果用高压锅煮粽子,煮40分钟左右.

1750 ml Water
180 g Brown onions/red shallots (sliced)
40 g Dried shrimp skin (dried baby shrimp)
40 g Shiitake mushrooms (soaked and diced)
4 tbsp Cooking oil
2 tsp Minced garlic
2 tsp Fine salt
1/2 tsp MSG
1 tsp Five-spice powder
1/2 tsp Ground pepper
TOPPING

1. Crispy fried onions/shallots
(Homemade or buy the ready-made from supermarket in package)
2. Spring onions (sliced finely)
3. Red chillies (sliced finely)
Note:

1. Dried baby shrimp (dried shrimp skins) can be replaced with the same amount of dried prawns (soaked and minced).
2. The amount of salt can be added or subtracted according to personal taste. (Dried shrimp skin is already salty).
3. The brown onions can be replaced with the same amount of red shallots.
