Today I celebrate mothers with one of the most cherished delicacies from Eastern Nigeria — Ukwa (African breadfruit).

Ukwa is more than a traditional meal. It is a nutrient-dense food known for its rich plant nutrition and satisfying texture.

Naturally packed with plant protein, dietary fiber, magnesium, potassium and iron, Ukwa supports digestion, heart health, and sustained energy. It is also a wonderful example of how traditional African foods provide nourishment in a balanced and wholesome way.

For today’s plate, I paired this cooked Ukwa delicacy with grilled salmon and steamed vegetables — bringing together plant nutrition, healthy omega-3 fats, and fresh vegetables for a nourishing meal.

Traditional foods remind us that wellness often begins with the foods rooted in our culture.

I’m claustrophobic.

And I had to complete two MRI scans back-to-back.

The machine is narrow.
The sound is loud.
The space feels endless.

My heart was racing before I even entered the room.

But I stayed.

Not because I wasn’t afraid.
Because I prepared.

I leaned on past victories.
I reminded myself:
You’ve done hard things before.

And I finished both scans.

Here’s what I’ve learned:

Strength is not always loud.
It is breathing slowly when panic rises.
It is staying when every instinct says “run.”
It is choosing courage while your body feels fear.

Sharing difficult moments doesn’t make you weak.

It shows growth.
It shows resilience.
It shows that fear does not get the final word.
