The effect of Junk Food and Diabetes
Junk food otherwise known as Ultra-processed food include processed and prepared snack foods with long ingredient lists that are high in calories but low in nutritional value.
Consuming excess sugars and fats found in these foods can contribute to weight gain. This excess weight is associated with diabetes.
It’s important to be aware of added sugars, fats, and sodium typically found in ultra-processed foods. Substituting with more fruit, nuts, unsweetened yogurt, and veggies can help keep weight and blood sugar levels closer to your goal. These options provide more nutrition, vitamins, minerals, and fiber important for maintaining health.
For a lower-fat snack, consider air-popped popcorn instead of chips, or an English muffin instead of a regular muffin.
If you like sweet flavors but need to limit your sugar intake, no-sugar-added creamers, yogurt, and ketchup are also available.

The occasion of World Diabetes Day reminds us all that we must not take this disease lightly as it can affect our lives in various ways.
In the year 1991, the International Diabetes Foundation and world health organization came along to create a day like World Diabetes Day. It is the day dedicated to the inventors of Insulin, Frederick Banting and Charles Best.
The theme from 2021 to 2023 remains the same: ‘Access to Diabetes Care.'

How to prepare Unripe plantain Fufu
Peel the green plantains
Cut the plantains into small pieces for easy blending
Transfer the green plantains into a blender and add water
Blend until very smooth to avoid a lumpy plantain fufu
Place a pot over medium heat and gently lower the blended green plantain
Stir with a wooden spoon to avoid sticking to the pot
As it starts to get thick, you will notice some lumps, ensure you keep pressing the mixture against the pot to smooth out the lump.
Cook for 15 minutes
Transfer to a plate
Leave it to cold for 2-3 minutes
Serve with delicious soup
You can also prepare plantain flour, then make it into fufu.
How to prepare plantain flour
Wash your plantain
peel it, wash it, and cut it into a small size
spread on a flat surface outdoor to sundry/ you can also dry with a dehydrator
break into chips, transfer into the blender
blend it into smooth powder form
leave it to cold
store it
plate a pot of water on the fire, when it’s boiled add the plantain flour
stir it and serve it.
