APPLE-GLAZED ROASTED PORK LOIN🍎

✨INGREDIENTS✨
Pork Roast
1 2 to 3 pound pork loin trimmed and tied
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1 tablespoon olive oil
2 tablespoons dijon mustard
1 tablespoon apple cider vinegar

Apple Glaze
2 tablespoons butter
1 tablespoon cornstarch
1 cup apple juice
1 tablespoon dijon mustard
1 tablespoon brown sugar
1 teaspoon apple cider vinegar

✨INSTRUCTIONS✨
-Preheat oven to 375 degrees. Season the pork loin with salt and pepper.
Heat the olive oil in a heavy, oven-safe skillet over medium-high heat. Sear the loin in the skillet until all sides are browned, about 2 to 3 minutes per side.
-In a small bowl, whisk together dijon mustard and apple cider vinegar. Brush over pork roast.
-Place skillet in the oven and cook pork to an internal temperature of 145 degrees, about 30 to 40 minutes depending on the size of the roast. Use a probe thermometer for accuracy.
-Meanwhile, make the apple glaze by melting the butter in a saucepan over medium high heat. Whisk in cornstarch until all specks of white are absorbed. Pour in apple juice and whisk in dijon mustard, brown sugar, and cider vinegar. Continue to whisk until sauce is thickened, which should only take a couple of minutes.
-Remove pork from oven and let rest about 5 minutes before cutting.
-Slice meat and serve hot drizzled with apple glaze

LOW-CARB INDIAN VEGETABLE SAMOSAS

✨INGREDIENTS✨
For the filling:
1 tablespoon butter preferably grass-fed
6 ounces cauliflower finely chopped
1 medium onion about 4 ounces
3/4 teaspoon salt (or to taste)
1 tablespoon fresh ginger root minced
1/2 teaspoon coriander ground
1 teaspoon garam masala ground
1 teaspoon cumin ground
1/4 teaspoon cumin seeds whole
1/8-1/4 teaspoon red chili flakes
1/4 cup fresh cilantro chopped

For the dough:
3/4 cup super fine almond flour
1/4 teaspoon cumin
1/2 teaspoon salt
8 ounces part-skim mozzarella cheese finely shredded

✨INSTRUCTION✨
For the filling:
-Preheat a large skillet over medium heat. Add butter. When butter has melted and stopped foaming, add the cauliflower and onions.
-Sprinkle the salt over the vegetables. Cook, stirring occasionally, until the edges have started to brown and the vegetables are cooked through.
-Stir in ginger root, coriander, garam masala, ground cumin, cumin seeds, and chili flakes. Stir for 1-2 minutes to allow the spices to toast. Turn off the heat.
Stir in the cilantro. Taste and adjust seasoning. Add salt to taste.
-Preheat oven to 375Âş Fahrenheit. Have a rolling pin, 2 pieces of parchment, and a baking sheet available.

For the dough:
-Set up a double boiler. I use a large sauce pan with about 1 1/2-2 inches of water in it and a medium mixing bowl that fits on top.
-Bring the water in the lower part of the double boiler to a simmer over high heat. Once it is simmering, turn heat to low.
-Meanwhile, place the almond flour, cumin, salt, and mozzarella in the top part of the double boiler. Stir together.
-Place the bowl containing the almond flour mixture over the simmering water. Be careful not to burn yourself with the hot bowl or with steam escaping. I use a silicone mitten to hold the bowl.
-Stirring the mixture constantly, heat until the mozzarella cheese melts and the mixture forms a dough.
-Turn the dough out onto one of the pieces of parchment and knead a few times to equally distribute the ingredients. Shape the dough into a thick rectangle and cover with the second sheet of parchment. Roll dough into a rectangle about 8 inches wide by 16 inches long.
-Cut the dough rectangle in half lengthwise, then in half cross-wise. Then cut each of the four sections in half crosswise to form 8 four inch squares
To assemble:
-Spoon the filling onto the center of each square, dividing it equally among the squares. Fold the squares on the diagonal to form triangles and pinch the edges closed. Place one of the pieces of parchment used to roll out the dough onto a baking sheet, then place the samosas on the sheet.
-Make fork holes in each samosa to provide a place for steam to release. Bake for 14-17 minutes or until golden brown.

The Best French Toast

✨INGREDIENTS✨
8 oz (8 slices) of Brioche bread
4 large eggs
3 tbsp heavy whipping cream
1 tsp pure vanilla extract
1 tbsp brown sugar
Pinch of salt
dash of cinnamon* optional*

✨INSTRUCTIONS✨
-Note: this egg mixture should comfortably batter 8 slices of Brioche bread that are a between 1/2 and 1 inch thick. It will batter 10-12 slices of French baguette or about 6 slices of Challah.
-Slice bread and set it aside.
In a deep and wide bowl, whisk together eggs, heavy whipping cream, vanilla extract, sugar, and salt. Whisk until smooth. Set aside.
-Preheat a large cooking pan oven medium to medium-low heat. Add a couple of tablespoons of canola oil and spread it evenly.
-Dip each slice of bread into the egg mixture as well as the edges. Brioche bread is nice and quick to soak up the egg. (Just batter as many slices as will fit into the pan. If you have to cook in two or more batches, batter bread right before adding it to the pan.)
-Place battered slices into the pan and let it cook for 3-4 minutes on each side, until golden brown. (Repeat with remaining slices of bread if needed.)
-Serve with your favorite topping.
