The Blueberry Coconut Breakfast Bars are a quick and easy breakfast to whip up for your family or friends. The gooey goodness of the warm berries and coconut milk will have them asking for seconds!
BLUEBERRY COCONUT BREAKFAST BARS
CRUST INGREDIENTS
3/4 cup almonds, crushed in food processor but still chunky
1/2 cup coconut flour
1/2 tsp. baking soda
1 1/4 tsp. pure vanilla
1/4 cup coconut oil
1/4 cup almond, coconut, or any nut milk
1/2 cup unsweetened apple sauce
2 Tbsp. maple syrup (optional)
TOPPING INGREDIENTS
1 1/2 cups blueberries, or berry of choice
3/4 cup unsweetened shredded coconut
1 can (13.5 oz.) organic coconut milk
INSTRUCTIONS
1. Preheat oven to 350°F.
2. Coat an 8x8” baking pan with coconut oil.
3. Using hands or spoon, mix all of the crust ingredients in a bowl. Pat crust mixture into 8x8"pan.
4. Bake for 12-15 minutes. Do not overcook as crust will be hard to serve. Let cool 10-15 minutes. (The bar crust can also be made the night before.)
5. For the topping, carefully place blueberries on top of the crust and try to fill the gaps. Sprinkle shredded coconut on top of the blueberries. Shake can of coconut milk and pour over the top.
6. Add optional toppings if desired (such as chopped nuts, cinnamon, nutmeg, oats, etc). Bake for 30-35 minutes, until the top has some lightly browned spots. Cool and cut into bars. Serve hot or cold.

My Story
I have a daughter who had a son. The first grandson of our life and he is absolutely wonderful, but had allergies from around two along with asthma. My daugther as a mother who is looking for answers for the best health possible for her son, researched many products. A dear friend invited her to check out the Juice Plus Company. Needless to say this was the answer to healthy beginnings for the entire family.
Myself and my husband have been on the Juice Plus fruits and vegetable blends since around 2011. We have less allergy problems, better immune systems and over all better health since then.
In 2015 we began taking regularly the Berry Blend product also. We are moving and doing more, as well as drinking more water and eating more fresh foods and less processed foods now.
I am in my sixties now and am on no prescription medications at all. Health is very important today since the aging process takes its toll on us so much more quickly with every passing day and every year. No one is promised tomorrow but I want to make each day a better day by taking responsibility of my health through clean eating and as much whole healthy food as possible, drinking as much water, and getting exercise. This is to stay available to enjoy my grown childrens friendship, play with the grandchildren and spend time with my husband and travel.
