That euphoric moment when you reach the summit! π
Hiking is an activity I truly enjoy. It can be challenging but the journey is always worth the views at the top!
To make sure I am well fueled for my hikes I always bring snacks if the journey will be for more than 60 minutes.
This ensures I replenish the carbohydrates I burned and makes hiking more enjoyable.
No one wants a hangry hiker π
Here are some items I will take
π Fruit: bananas, apples and oranges travel well.
πPeanut butter and banana or jelly sandwich
πSnack bar: fig bars are my favorites.
π Trail mix: pick one with a combination of nuts and dried fruit. I always skip the chocolate ones if it is hot out.

π Indian Spiced Cauliflower π
Cauliflower has really been in the spotlight over the past few years. The popularity is mostly due to the vegetable becoming a substitute for rice and even pizza crust. I am honestly not a fan of cauliflower rice but I do love baking it!
My cauliflower recipie has an Indian twist using spices to pack it with flavor!
I really stepped outside my comfort zone with this recipie. There is no basil, parsley, or oregano π. I truly enjoy trying new flavor combinations from different cuisines.
