🌿 Nesto Pesto 🌿
Keep a jar of Nesto Pesto in the refrigerator and serve it on just about everything; crackers, bread, salads, pasta, omelets, you name it!
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
4 cups of tips of fresh raw Nettles (You can also quickly blanche the Nettles, but I prefer to make Nesto with raw Nettles. Just be careful when making it so as not to get stung).
Garlic (3-6 cloves, more or less)
¼ cup Sunflower seeds, Cashews and/or Walnuts
¼ cup parmesan cheese
¼-½ cup Olive oil
Optional: ½ cup of Basil, Parsley, Cilantro or other flavorful herbs will enhance the flavor
Optional: ¼ cup of dried Tomatoes preserved in Olive oil
𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀
Place Nettles in blender or food processor with Garlic and nuts and 1/4 cup of Olive oil.
Pulse until well blended, adding more Olive oil as needed. Be certain that the Nettles are well blended. Blending destroys the little hairs on stems and leaves that contain formic acid, which causes the sting. Heat also destroys the formic acid/sting, so if you prefer you can blanche or lightly steam the Nettles first.
Add the finely grated parmesan cheese and stir in well. If you wish, you can add a little salt and pepper or a dash of Bragg Liquid Aminos for added flavor.
Stored in the refrigerator, it will last for several weeks.

Get out and CREATE! This is a great recipe…
This syrup features a springtime fave, violet! It is demulcent, expectorant, and rich in vitamin C. Take a small amount daily, and benefit from an added boost to your immune system. Use a larger amount during respiratory infection to help with coughs, congestion, & irritated respiratory mucosa. 🌿✨
WILD FORAGER'S SYRUP
½ c fresh plantain (Plantago spp.) leaf
½ c fresh violet (Viola spp.) leaf/flower
⅛ c fresh pine (Pinus spp.) needle, chopped
½-2 c raw honey
Directions: Make the plantain + violet juice: Combine fresh plants with 2 tablespoons water in a blender. Blend for 1-2 mins.
Strain juice through a coffee filter/fine strainer. Measure the amount of liquid you have squeezed out of the filter or strainer. Set aside.
Heat ½ cup water to boiling.
Place pine needles in a heat-safe glass jar & pour ½ cup of just-off-the boil water over them. Steep covered for 20-30 mins.
Strain infusion through a coffee filter/strainer. Measure the amount of liquid you have squeezed out, and pour it into a saucepan.
Add your juice to the saucepan.
Add honey in a 1:2 liquid: honey ratio for a shelf life of 1 year, or in a ratio of 2:1 liquid: honey for a shelf life of 3 weeks.
Warm mixture just slightly to enable the liquid and sweetener to mix. Avoid heating above 110 degrees F.
Transfer syrup to a sanitized bottle/jar. Cap tightly.
Label and store in the refrigerator.
Take 1 teaspoon to 1 tablespoon as needed.
Note: Do not give to children under 1 year. 🌿
