Go sit under a tree. Walk barefoot. Listen to the birds. Watch the ocean. Let the wind touch your face. Recovering does not always begin with complicated things — sometimes it begins by returning to the natural world and remembering who we are.
Nature calms the nervous system, clears the mind, and reminds us to slow down and listen.

Part two is very simple. First, wash the rice and soak between ½ cup and 1 cup of rice in hot water the amount depends on how much you’re cooking.
While the rice is soaking, prepare the peppers by removing the tops and cleaning out the seeds. Then chop the remaining half onion, sweet potato, carrots, zucchini, and potato if you’d like, and sauté the vegetables gently until softened.
After the rice has soaked, drain it well and mix it together with the sautéed vegetables. Add salt, curry, and fresh parsley, cilantro, and dill if you like, then mix everything well.
Stuff the peppers with the filling and place them nicely into the pot so they can absorb all the delicious sauce and flavors.
Cover and cook for about 30–35 minutes on low heat. Keep an eye on the pot so it doesn’t dry out. If needed, add a little more water or crushed tomatoes.
And that’s it an easy, comforting one-pot meal full of flavor. Enjoy with a delicious piece of fresh bread.

I’m using two pieces of chicken, but you can use any favorite part. First, place the chicken into the pot together with half an onion and saute.
In a separate bowl, mix about 1 teaspoon paprika, 1 teaspoon curry, ¼ teaspoon sumac, salt, and olive oil. Mix everything well into a rich seasoning paste, then spread it over the chicken. This gives the dish a beautiful color and deep flavor.
Next, add about ½ cup to 1 cup crushed tomatoes, depending on the size of the pot and how much sauce you like. Let everything cook together for a few minutes so the flavors begin to blend.
Then add water, cover the pot, bring it gently to a boil, reduce the heat, and let it simmer slowly.
Meanwhile, we’ll prepare the stuffed peppers for Part 2.
Eating clean does not need to be complicated.
Start by replacing boxed cereal with simple, nourishing foods your family can actually recognize.
Try hot wheat cereal, buckwheat kasha, rice pudding, spaghetti with warm milk and honey, yogurt with fruit, homemade granola, or even a simple slice of good bread with butter, honey, or jam.
Real food can be very simple. It does not have to follow a perfect diet or a complicated plan.
Start slowly. Don’t rush. Begin with yourself first, and bring these nourishing basics back into your home little by little.

Use quality ingredients whenever possible: organic butter, delicious raw honey from your local farmers market, and preferably homemade bread made with freshly ground organic grains. Food does not always need to be fancy or overloaded with ingredients to be healthy. Sometimes the most healing meals are the simplest ones. 🌿
