Ok, I’m still learning so don’t beat me up too hard. 🙏🏻 But any tips or tricks are much appreciated!

I’ve been trying to be more conscientious of my eating and so with that in mind, today for lunch I started throwing whatever sounded good in a skillet with a little bit of olive oil and cooked it. It came out delicious and so filling!

Here are the ingredients and macros. I definitely should have taken it easier on the cheese… but… cheese … 🤤

I was diagnosed with type 2 Diabetes January 27th, i immediately stopped eating all processed sugars. I had an A1C test done and it was at 11.6. I haven’t been checked since but I do check my sugars twice a day and averaging 83-124 readings. I’ve always been pretty good in the kitchen but this has challenged me to try new healthier foods and still be able to enjoy cooking. It’s not easy suppressing all the cravings but the only advice I can give you is to try being a bit fancier and go the extra mile making food fun, this way, you don’t crave eating out or having fast food since there isn’t much food out there that is healthy, unless you can eat plain salads 24/7 and I know I can’t.
