Recipe:
• Onion, mushroom, asparagus dish: put asparagus in a baking dish with halved mushrooms and chunks of purple onion and toss in avocado oil, salt, and black pepper. Bake in oven at 400°F until tender. Mine took 35 minutes, but I also made a couple huge dishes of it for my family, so cooking times will vary depending on how much you’re cooking - most likely it’ll be more like 20 minutes!
• Chicken thigh: I cut mine in half lengthwise to make it thinner so it’ll cook easier and be more tender. Rub with some butter then season with oregano, salt, and black pepper. Preheat a skillet to medium heat. Add the thighs into the skillet and sear both sides for a few minutes. Turn heat down to low, cover the pan, and cook until there’s no more pink in the centre.
