🌱Roasted + Seasoned Sweet Potato & Crispy Chickpea bowl🌱It’s amazing the difference a little seasoning can make to a dish. This spice mix has a kick and it’s super delicious. This bowl was very nourishing 🤗. Served with brown Jasmine rice. Happy weekend 💚.
🌱Recipe: Roughly cut 2 sweet potatoes into approximately 1-inch pieces. Rinse and drain 1-15oz can garbanzos. Make spice mix: 3 tsp paprika, 1 tsp black pepper, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp chili powder, 1/2 tsp cayenne, 1 tbsp nutritional yeast and salt to taste. Spread cut sweet potatoes on parchment-lined baking sheet and squeeze some lemon juice on top to help spices stick. Sprinkle spice mix in top until fully coated. Toss garbanzos in remaining spice mix and rub until coated. Spread onto parchment-lined baking sheet. Bake sweet potato and garbanzos at 450F until starts to brown and get crispy.

I was browsing through my feed and when I saw this plate of bbq salmon and grilled pineapple goodness I made over the summer I was feeling all the summer vibes. It might only be January but I can eat this anytime of the year!

i’ve never been one who is into valentine’s day but ezra has turned this girl into a mush🙈🤷🏻‍♀️👶🏻whipped up some chocolate chip heart shape pancakes for this crew this morning🥞used my 6-ingredient paleo pancakes recipe from the blog and drizzled the last of our maple syrup on top + added some creamy peanut butter👌🏻doesn’t get any better than this!

Good morning! Starting off the new week with a mini toasted onion bagel topped with dairy free chive cream cheese and wild smoked salmon, two hard boiled eggs and arugula salad on the side. I hope you have a great day!

So as much as I love cookies and all the other holiday treats, I missed my favorites. This morning I made avocado toast and shared it with my mom because she told me she’s never had avocado toast before?! I couldn’t believe it but we definitely enjoyed these though. •


toast: homemade artisan bread toasted and topped with hummus + cilantro + boiled eggs + salt & pepper. The other has mashed avo + cilantro + boiled eggs + olive oil + salt & pepper

Feels SO good to be back in my kitchen and back to my veggie bowls after lots of holiday fun with the fam ✨ I made a spicy peanut dressing on this one and it was perfect 👌🏼 Mixed greens, avocado, tomatoes, leftover roasted broccoli, h**p seeds, and chopped cashews.
SPICY PEANUT DRESSING 💥
- 1 tbsp peanut butter
- 1 tbsp apple cider vinegar
- 1/2 tbsp water
- a couple drops of hot sauce
- salt and pepper to taste
Mix it all up in a small dish with a fork. Enjoy! 💫

Waffled Omelettes made with spinach, sweet mini peppers, and red onion and topped with mashed avocado, a dollop of harissa, bagel seasoning, and micro greens

To make omelette waffles, sauté veggies in a pan until they’re just soft (I used 3 peppers, 1-2 cups spinach, and 2 tablespoons chopped red onion).
In a big bowl, whisk together 2 eggs with salt and pepper. Add sautéed veggies, and mix together. Spoon into a preheated waffle iron (med high, use come cooking spray before so it doesn’t get stuck).
Cook for about 4 min in the waffle iron until eggs are cooked and golden. Remove carefully with a fork. Top with whatever suits your fancy.

If you aren’t roasting your tomatoes, get on it ASAP! Roasted Tomato Avocado Toast on Multigrain Bread topped with za’atar. To make roasted tomatoes, spread on a baking sheet on foil (I like to use the toaster oven cause it’s easier), cut tomatoes in half and drizzle with oil. Bake at 425 for 20 min!

This Salmon Sunday with herbed CHIMICHURRI GNOCCHI-ED it out of the park 🙃 Happy Sunday loves! I hope you all had an AMAZING weekend. If you saw my last post you know that I thoroughly enjoyed mine. Today I slept in, worked out, did a Trader Joe’s run and can home to cook and relax. And this, this meal was born! I recently tried Trader Joe’s gnocchi and I am officially hooked. I baked it and it got super crispy! Paired with some crispy wild salmon, roasted tomatoes, avocado, Brussels and cilantro/basil/parsley/kale chimichurri and damn now I just need a nap and my Sunday is complete. See below for recipe and details. What did you do this weekend?



Details: Crispy Salmon (see highlights for details), roasted Brussels (tossed in garlic, coconut oil and coconut aminos), roasted tomatoes on the vine and gnocchi (tossed in olive or avocado oil and baked in cast iron on 450 for about 25 minutes (shake pan every few 8 minutes or so). Chimichurri: 1 head of cilantro, one head parsley, 1 cup kale, 1 handful basil, 3 cloves garlic, 1 tablespoon coconut aminos, 2 shakes red pepper flakes, juice from 1/2 lemon squeezed, 1/2 teaspoon salt, 1/4-1/3 cup olive oil. Process in food processor until smooth.
