HOMEMADE MAPLE BAKED BEANS ON AVOCADO TOAST. I rarely eat bread. Once in a blue moon I crave it and when I do, I don't fight it. I'm not sure if it's the abysmal weather today and but I'm craving comfort food. Specifically, I was dying for baked beans on toast - go figure. I'm not into canned baked beans - they are often filled with huge amounts of refined sugar and other nasties and in general I avoid canned foods. So, what's a girl to do? Take some time to make them myself! I've never made these before and I'm sorry I haven't. They are divine. A combination of slow cooked caramelized onions and then a combination of navy and garbanzo beans cooked in delicious sauce of apple cider vinegar, molasses, Tamari, smoked paprika, Worcestershire sauce, tomato paste, garlic, and maple syrup. Hmmm, imagine a crunchy piece of sourdough toast with a thick layer of smashed avocado π₯ all covered in this smoky, maple flavored bean mix! Magnificent ππ

Just a little rainbow chopped salad. Add whatever veggies, healthy fats, crunch and dressing you like! This can be added to a meal as a side salad or you could add some protein to this and make it your entire meal - quinoa, tuna salmon, chicken -- take your pick! ππ₯π₯π π₯

The best start is an early start! πΈβοΈIt doesn't matter what your morning ritual is, just find something that nourishes you and gets you going for the day! Morning walks are my absolute favorite and I yearn for winter days to end so I can start my morning walks again!

Chicken soup and matzah balls. The soup is a two day process or one very long day process that begins by making a chicken stock from tons of chicken bones, beef marrow bones, veggies and aromatics. The stock simmers for hours and hours as all the flavor is extracted and the layers of fat are removed from the top in stages. The stock is chilled and the next day the top layer of hardened fat is removed. The soup is then made using the concentrated stock, fresh chicken pieces, fresh veggies and aromatics. What's left is a rich, complex, full flavored soup. I watched my dad making this soup growing up and was amazed at the time, love and passion that went into his chicken soups pot! Matzah balls are made with eggs, Matzah meal, chicken shmultz (fat) seltzer or club soda (the key to making light fluffy matzah balls) salt and pepper. They need to be mixed in a certain way so you don't end up with too dense, dry, hard matzah balls.
