my recent go to weeknight meal for good skin & hair 🍣 that’s packed with protein & fiber

miso salmon & edamame rice
ingredients
salmon fillet with skin on
2 tbsp miso Marukome USA Inc.
1 tbsp sake
1 tbsp mirin Kikkoman USA
1 tbsp soy sauce Kikkoman USA

edamame rice (using Zojirushi America rice cooker)
1 C rice
frozen shelled edamame
cilantro (optional)
green onions (optional)
nori kome furikake

1. Prep salmon marinade. If possible, let salmon marinate for an hour. I normally don’t have the time/patience to wait and it still comes out delicious.
2. In toaster or oven, broil fish at 425F for around 15-20 mins. Monitor until fish is golden brown.
3. Cook rice as usual. Once complete, add in frozen edamane, veggies and furikake. The hot rice will cook the edamame without the edamame becoming mushy.
