Tuscan White Bean Soup
Ingredients:
1 lb Italian sausage, casings removed
1 tbsp olive oil
1 onion, diced
2 carrots, sliced
2 celery stalks, diced
3 cloves garlic, minced
2 cans cannellini beans, drained and rinsed
4 cups chicken broth
1 can diced tomatoes
2 cups fresh spinach or kale
1 tsp Italian seasoning
½ tsp red pepper flakes
Salt and pepper to taste
Parmesan for serving

Crispy Greek Chicken Tenders
Ingredients
1 lb chicken tenders
1 tbsp olive oil
Juice of 1 lemon, about 2 tbsp
3 cloves garlic, minced
1 tsp each dried oregano + dried parsley
½ tsp each garlic powder + onion powder + paprika + S&P
1 tbsp fresh parsley, chopped
Cooking spray
Lemon wedges to serve

Oatmeal, apple and carrots! I don't eat any sugar at all! No flour
Ingredients:
2 cups (200 g) rolled oats, chopped in a blender
1 teaspoon baking powder
1 cup (240 ml) milk of your choice
1 carrot, grated
9 dried apricots, rinsed with hot water and chopped
4 tablespoons raisins, rinsed with hot water

Golden, crispy fritters with tender zucchini and a lightly cheesy center.
Ingredients
2 medium zucchini, grated
½ tsp salt
1 egg
⅓ cup flour
¼ cup grated Parmesan cheese
2 green onions, sliced
1 clove garlic, minced
Black pepper to taste
Oil for frying
Quick Instructions
Grate zucchini, sprinkle with salt, and let sit 10 minutes.
Squeeze out as much liquid as possible.
Mix zucchini with egg, flour, Parmesan, green onions, garlic, and pepper.
