This is the dish we always turn to when we are in the mood for some Thai takeout!
Keto Cashew Chicken
Ingredients
* 3 raw chicken thighs boneless, skinless
* 2 tbsp coconut oil(for cooking)
* 1/4 cup raw cashews
* 1/2 medium Green Bell Pepper
* 1/2 tsp ground ginger
* 1 tbsp rice wine vinegar
* 1 1/2 tbsp liquid aminos
* 1/2 tbsp chili garlic sauce
* 1 tbsp minced garlic
* 1 tbsp Sesame Oil
* 1 tbsp Sesame Seeds
* 1 tbsp green onions
* 1/4 medium white onion
* Salt + Pepper
Instructions
1. Heat a pan over low heat and toast the cashews for 8 minutes or until they start to lightly brown and become fragrant. Remove and set aside.
2. Dice chicken thighs into 1 inch chunks. Cut onion and pepper into equally large chunks.
3. Increase heat to high and add coconut oil to pan.
4. Once oil is up to temperature, add in the chicken thighs and allow them to cook through (about 5 minutes).
5. Once the chicken is fully cooked. Add in the pepper, onions, garlic, chili garlic sauce and seasonings(ginger, salt, pepper). Allow to cook on high for 2-3 minutes.
6. Add liquid aminos, rice wine vinegar, and cashews. Cook on high and allow the liquid to reduce down until it is a sticky consistency, There should not be excess liquid in the pan upon completing cooking.
7. Serve in a bowl, top with sesame seeds and drizzle with sesame oil. Enjoy!

These Easy 30-Minute Zucchini Pizza Boats are a delicious, low-carb dinner idea that are perfect for satisfying those pizza cravings - and they're super easy to throw together at the last minute!
Zucchini Pizza Boats
Ingredients
* 4 zucchini, sliced in half lengthwise
* 1 small can Pizza Sauce
* 1/2 8oz package button mushrooms, sliced
* 1 small red onion, diced
* 1/2 green pepper, diced
* 2 cups shredded mozzarella cheese
* 1 tbsp fresh chopped basil (optional topping)
* 1 tsp red chili flakes (optional topping)
Turkey sausage
* 2 tsp olive oil
* 1/2 lb ground turkey
* 2 tsp fennel seeds
* 1 tsp garlic powder
* 1/2 tsp salt
* 1 tsp Italian seasoning (or 1/2 tsp oregano & 1/2 tsp basil)

Instructions
1. Preheat olive oil in a large skillet over med-high heat. Add turkey and seasonings, crushing up with a crushing spoon and mixing well. Cook for 5-6 minutes until turkey is browned and fully cooked. Remove from heat and set aside.
2. Preheat oven to 400 F. Cut zucchini in half lengthwise and scoop out flesh. On a baking sheet or in a 9x13 casserole dish, spread each zucchini boat with pizza sauce, then top with sausage, mushrooms, red onion, green pepper and cheese.
3. Bake in the oven for 15 minutes or until cheese is melted. Remove from oven and sprinkle with fresh basil and chili flakes. Serve and enjoy!
