This heat wave is a killer, but one thing sure to brighten my day is an amazing lobster roll. I know lobster meat can be pretty pricey, so I never pass up a good deal when I see it on sale.

Lobster rolls can be made in a variety of ways, but are best when kept simple. Allow that lobster to shine! This version is served cold in a light lemon/mayo dressing.

Ingredients:
• 16 oz Lobster Meat, poached and chilled (I used knuckle and claw meat)
• 1/4 cup Red Onion, finely diced
• 1 Celery Stalk, finely diced
• 2 Tbsps Mayo
• 1 Tbsp Fresh Lemon Juice
• Salt, to taste
• 6 Split-top Brioche Buns
• 6 Lemon Wedges

Instructions:
1. Add lobster meat, red onion, celery, mayo, lemon juice, and salt into a mixing bowl. Gently toss all ingredients until well combined and evenly coated in mayo.

2. Open rolls and evenly distribute lobster mixture between the six buns. Serve with an additional lemon wedge and micro-greens (optional).

Makes 6 servings.
