I'm sharing one of my go to summer meals- a Mediterranean inspired grain bowl. It's so easy and full of flavors and textures. When cooking for one, I find it so so helpful to make substitutions and adapt recipes to use ingredients I have, so I reduce food waste and save money, that's what I talk about in this video. Hope it's helpful for someone!

I LOVE beets! roasted, steamed, canned, pickled, you get the idea. I also love my Instant Pot. Steaming beets in an instant pot is a super easy way to cook them. It doesn't add much flavor, but you can use seasonings to do that, or quickly broil them. Steamed beets are so good on salads! What are your favorite beet recipes?
Beets in a Pressure Cooker Cooking beets in a pressure cooker or Instant Pot is a great way to prepare these colorful veggies. It's easier than roasting them.

I think I've cracked the code on almost as easy mac & cheese as the boxed kind. It's just as creamy and silky, more cheesy, and comes with a bonus crunchy topping. This baked mac & cheese is so easy, and can even started in the microwave!
