Pumpkin Streusel Muffins
Serves 6 mammoth muffins or 12 regular sized ones
Ingredients:
Muffins- Wet, 1 egg 
1 14-15oz can of pumpkin puree 
¼ milk of preference (non dairy also works!)
¼ vegetable or canola oil
1 tablespoon vanilla
Dry- 1 3/4 c all purpose flour
3/4c granulated sugar (or 1c if you like a very sweet muffin)
2 teaspoons baking powder 
A pinch of salt 
Dash of cinnamon (about 1/2 -1 tsp)
Dash of cardamom (1/2 to 1tsp)(or pumpkin spice if ya feelin’ basic, and there's nothing wrong with that)
Crumbly Streusel top:
1/2c granulated sugar
1/4c all purpose flour,1/2c - ¼ if you're making big ones ½ if you're making regular size
4-6 tbsp unsalted cold butter, cubed, 4 if you're big muffins, 6 if regular
6 1/2 teaspoons of cream cheese, divided -optional 
Butter for serving if you aren't using cream cheese -sweeten this if you’d like
Note: check your oven temp, sometimes elevation can change baking. Use the toothpick to check for doneness, 45 minutes will be well done if you aren’t using muffin tins

Set the oven to 350 degrees And line a cupcake or muffin pan with liners.
To a large bowl add all the dry ingredients and whisk,to a medium bowl add all the wet ingredients into a bowl and whisk until cohesive (just too add a little air so it’s not dense use a mixer if you’d like) Add all of the wet into the dry and whisk until it's slightly sticky but showing no more flour remaining about 4-5 minutes. Evenly divide the batter into the muffin pan. 

To a small bowl add flour and sugar, toss the cold butter with your hands rolling into little pea sized balls but dont think too much about it, its meant to be a teeny bit messy. 

If using cream cheese, use a tsp measuring spoon to make a small little hole on top then top the crumbles on top of the batter, try not to get any of the sheet pan because its like the best part. Start checking for done-ness at 30- 35 minutes for big muffins and 20-25 for regular muffins. Remove from the oven ( do the tooth pick trick)and let cool in the pan for 10 minutes then take out to cool. Enjoy!
