What exactly is an essential amino acid?
Essential amino acids are amino acids that humans and other vertebrates cannot synthesize from metabolic intermediates. Mid October harvest! A handful of yummy berries and a huge bowl of KALE!
Funny story about the kale. (Read it if you want a good lesson from the garden story)
I planted a small row of seeds, thinking maybe they’d produce something. I like to throw kale in my smoothies, so I thought “why not plant some and freeze dry it?”
Well, it came up really well! I had SO much! I was so excited to harvest it….but I procrastinated. It was ready for me, but I wasn’t ready for it. I didn’t have time to get it all washed and prepared for the freeze dryer. So I let it go for a week thinking it was fine.
When I went out to harvest, all the kale leaves had bugs/eggs covering the backs of them. I couldn’t harvest any of it! I was so sad. So I just let it die off. And chalked it up to a lesson learned..
Well, the garden had a different lesson for me to learn.
A couple weeks ago, while harvesting other garden goods, I noticed something underneath the dead kale leaves. New fresh baby kale was emerging! I was so happy! I brushed all those dead leaves aside and have harvested 3 times since then!
I think about the metaphor of this kale (probably too much), and how we get second chances. Things in our lives might not go how we imagined or intended them to. And we mourn that loss. And sometimes we are devastated. But then, if we look hard and brush aside that which has died off, a second chance emerges. And that second chance just might be what we needed.
And it’s a beautiful thing.

1, 2, or 3?
Sometimes a sq**rt of whipped cream makes all the difference!
And does this look a little green to you? That’s because there’s a cup of mixed baby greens in it! And you can’t even taste them!
This shake has been my go to every morning for the past two weeks. It’s that good! AND it fits my gluten free/dairy free/sugar free diet! 🙌
1 cup almond milk
1 cup mixed baby greens
2 scoops Clean and Happy Living Collagen
1 tablespoon natural peanut butter
1 tablespoon monk fruit sugar
1/4 teaspoon xanthan gum (thickens it awesomely)
1/2 frozen banana
1/2 cup ice more or less depending on how ice cream like you want it!
Blend it all up! And devour! 🤤

Last week at church a teenaged girl talked about how she had been hiding from God.
I’ve thought about that a lot this week. And it came to my mind again this morning as my kids were looking for their hidden eggs and baskets.
There are times in our lives where we feel like God may been hiding from us, but really, we don’t feel worthy of His love, so we end up hiding from Him.
He wants us to come unto Him, call out His name, and allow HIM to find US.
You are worthy of His love. God and Jesus Christ love you and me so much- they are just waiting for us to allow them in our lives.
I’m so grateful for Easter and the resurrection of my Savior and friend, Jesus. I find so much comfort and peace in Him. He died so that I may live. And I can be with those I love again.
Happy Easter indeed.

Ummm Happy Spring?
I was thinking about this today, and how every year we get snow in the spring, and we (I) complain about it. Is it because we don’t think it’s supposed to snow in spring? If we expected that we would get spring snow, would we still complain?
Sometimes (most times) we complain because things are happening that we think ‘shouldn’t’ be happening. Or it throws off what we think is our normal.
Maybe we just need to be okay when things don’t go the way we expect them to…..
For the record, I do think the snow and blossoms are beautiful together.
What do you think? Is your weather not acting how it ‘should’?

Soooo……
I was diagnosed with 7 months ago 🥺 (which btw is more common than you think and many are suffering from it without even knowing!), and since then, I’ve been trying to heal myself through changing my diet. I went the day after I was diagnosed. I’ve noticed a little bit of change, but not a lot.
So, I started digging deeper for answers and . I started a liver cleanse by doing and gluten-free. I’m 10 days in, and this is HARD! But I’m feeling better already.
HOWEVER, saying goodbye to cookies has me like 😩. I was having a serious craving, so I just threw some healthy ingredients together (with none of the off limits stuff), and came up with these simple cookies that actually taste GOOD! They are not going to be your buttery floury sugary cookies- but if you need to stay away from those things- this is good!
If you’re looking for a cookie recipe (or just want some ) - you gotta try these!
-1 egg
-1/2 cup natural peanut butter
-1/2 cup raw honey
-2 scoops collagen (link in bio)
-1 cup oats (blended up to a course powder)
-1/4 cup additional oats
-1/4 cup dairy free sugar free chocolate chips (I ❤️ the Enjoy Life brand)
-dash of sea salt
Mix everything but the oats and salt together. Then mix in the oats. Spoon them onto a baking pan, bake for 9 mins at 375 degrees.
