SPRING RECIPE - Cold Rolls
Such a versatile lunch option that can cater to many dietary requirements.
Here's what you need:
- Rice Paper Rolls
- Protein Source (E.g. Chicken, Prawns or Tofu)
- Thinly Sliced Vegetables (E.g. Carrot, Cabbage, Capsicum, Lettuce, Cucumber)
- Vermicelli Rice Noodles (optional)
- Soy Sauce or Sweet Chilli Sauce for serving
How to prepare:
1. Prepare a large bowl with hot water to soak the rice paper.
2. Cook Rice Noodles (if using) according to packet instructions.
3. Dip the rice paper in water moving it around until it becomes soft then transfer flat onto a plate.
4. From here load up the Rice Paper with your chosen fillings.
5. Fold each side over and then begin to roll it up until it is completely wrapped.
6. Continue with remaining rice paper and use all the ingredients you have prepared.
7. Have 2-3 per serving with some dipping sauce (you can make a few days worth at a time).
8. Keep refrigerated and in an airtight container.

Ingredients:
2 Chicken Breast Fillets, Cooked Thinly Sliced or Pulled
2 Cups Of Cooked Quinoa
1 Large Ripe Avocado, Thinly Sliced
1 Punnet Of Cherry Tomatoes, Lightly Pan Fried
1 Large Cucumber, Thinly Sliced
2 Handfuls Of Baby Spinach
1 Handful of Parsley or Coriander, Finely Chopped
Homemade Ranch Dressing
Instructions:
In serving bowls or lunch containers, place a scoop of the quinoa and a portion of the chicken. It's best to do this when the chicken and quinoa have slightly cooled but are still warm.
Then, share out all the fresh ingredients between each bowl or container.
Drizzle with dressing, salt, pepper, and your herb of choice.
Serve and enjoy, or place in the fridge for work lunches.
