Southern Bluefin Tuna season has arrived just intime for the newcastletunafest tuna trail to begin.

With over 40 participating venues to pick from there is no better time to get fantastic quality tuna on your plate!

We were honoured today to once again host chef.koji.2022 for another tuna masterclass with students and staff from Hunter TAFE.

Koji gave students a demonstration on breaking down a beautiful Southern Bluefin Tuna, followed by lessons on slicing the perfect tuna sashimi.

Chef Koji will be demonstrating another Tuna breakdown with an 80kg Bluefin tuna this Sunday at newcastletunafest. Hope to see you there!

Earlier this week we were lucky enough to visit Mainstream aquaculture in far north QLD, the home of our infinitybluebarramundi Etty Bay Barramundi.

This was a fantastic opportunity to learn how our Barramundi is raised from small fingerlings all the way to the large fish we receive and process.

The care and effort that goes into these fish is outstanding, and the high quality sustainable product we receive is testament to that.
