This pavlova recipe will make five pavlova discs. Preheat the oven to 130 degrees Celsius. Beat egg whites with a pinch of salt until frothy on medium speed. Gradually add sugar, one tablespoon at a time, allowing a minute between each addition. This process takes approximately 10-15 minutes, resulting in a beautiful, glossy, thick consistency. Beat in cornflour and vinegar for 10-15 seconds. Fill a piping bag with a nozzle or cut the end to pipe the meringue discs. Pipe onto prepared trays and bake for 45 minutes. Turn off the oven and let the pavlova cool inside. Once cool, assemble by stacking the pavlova discs and filling the layers with whipped cream. Decorate with berries, mint leaves, and a dusting of icing sugar.
