I couldn’t resist the ChatGPT doll trend! Obviously I come with coffee, a strawberry smoothie, a bottle of water, an iPhone, and a laptop. ☕ 🍓 💧 📱 💻
I tried REALLY hard to add some gluten-free items, but ChatGPT kept messing it up and spelling everything wrong on the labels. It was like it was just messing with me! 🤦♀️

If you have celiac disease, you’ve probably had the unfortunate experience of hearing one of the these statements:
1. “Just a Little Won’t Hurt”
Downplaying the impact of gluten consumption can be incredibly frustrating and shows a lack of understanding about the seriousness of celiac disease.
2. “Isn’t That Just a Fad Diet?”
Questioning the legitimacy of celiac disease by comparing it to trendy diets can be dismissive and invalidating for those who live with this condition.
3. “Can’t You Just Pick the Gluten Off?”
Suggesting that gluten can simply be removed from food demonstrates a misunderstanding of cross-contamination and the need for strict gluten avoidance.
4. “Are You Sure It’s Not Just in Your Head?”
Doubting the reality of someone’s symptoms and condition can be hurtful and make individuals feel misunderstood and unsupported.
5. “You’re So Picky”
Labeling someone as picky for needing gluten-free options minimizes the medical necessity of their dietary restrictions and can make social situations uncomfortable.

🍴We know to handle someone’s food with extreme care when they have a food allergy.
🍴While someone with celiac disease is not going to go into anaphylactic shock from gluten exposure, the consequences of gluten ingestion for a celiac are serious. Even small amounts from cross contamination.
🍴It's not just stomach pain or bloating. We're talking small intestinal damage, nutrient absorption issues, and so much more.
🍴While I have certainly found that many people and restaurants already do treat celiac disease with the seriousness that it warrants, I think we still have a long way to go overall.

❤️ Yes, people with celiac disease actually do require a gluten free diet to stay healthy.
❤️ Did you know that when someone with celiac disease eats even small amounts of gluten it actually causes damage to their small intestine and impacts vital nutrient absorption?
❤️ One of the most meaningful ways you can show love to a celiac is to validate their disease by showing support.
❤️ This might look like speaking up when someone questions the seriousness of their disease, taking gluten cross contamination seriously, checking that they are comfortable with restaurant choices in advance, and overall never pressuring them to make food choices that they are not comfortable with.
