๐ Because who doesnโt love pizza?! ๐ Using your imagination recreating โpizzaโ while still getting in more veggies in ๐ช๐ผ. Whatโs your favourite??by

My personal favorite is the portobella pizza but all of these are great fun options you can make at home. Get crazy with it and add some fun toppings of choice! Info below:
Bell pepper pizza - 1/2 bell pepper, 1/4 cup marinara sauce, 2 tbsp mozzarella cheese + 2 broccoli florets.
Portable pizza - 1/2 Portabella mushroom cap, 1/4 cup marinara sauce, 2 tbsp mozzarella cheese, 2 basil leaves, 1 olive cut into slices.
Zucchini pizza boats - 1/2 zucchini, 1/4 cup marinara sauce, 2 tbsp mixed cheese, 2 cherry tomatoes.
Rice cake pizza - 1 rice cake, 1/4 cup marinara sauce, 2 basil leaves, 2 tbsp mozzarella cheese.
Pita pizza - 1 medium pita, 1/4 cup marinara sauce, 2 tbsp mozzarella cheese, 2 basil leaves + 3 cherry tomatoes.
Pizza pizza - Order it ๐ Because sometimes you can treat yo self to a damn real pizza.
How to cook the veggie pizzas:
1 - Preheat oven to 350F.
2 - Scoop out the inside of the mushroom, bell pepper or zucchini boat (you can cook the bell pepper or zucchini in oven before adding toppings or add toppings then cook if you donโt need it well done. Mushroom you can add the toppings right away & cook)
3 - Add 1/4 cup marinara, toppings & cheese
4 - Bake in oven for about 10 minutes then enjoy!

Getting creative with a sweet potato using a spiraliser to take eggs to the next level.

โข 2 large free range eggs
โข 1 tbsp Extra Virgin Olive Oil or avocado oil
โข 1/2 large sweet potato (spiralized)
โข 100 grams cherry tomatoes - (sliced in half)
โข 200 grams Spinach or other leafy green

๐๐ผ Method
1. Preheat oven to 350F.
2. Heat on medium a ovenproof pan. Add 1/2 the oil. Add the spiralized sweet potato. Sautรฉ for 2 minutes before shaping to nests.
3. Crack the eggs in the middle of the nests.
4. Allow to set then transfer to the oven for 3 minutes to cook just through. Add the tomatoes
5. Remove from the pan from oven.
6. Add the spinach to the pan. Allow to cook in the residue heat.
7. Drizzle the remaining olive oil.
8. Season to taste. ยป

โฐCOOK TIME : 25 MINUTES
โฑ TOTAL TIME 30 MINUTES
INGREDIENTS
1 tablespoon olive oil, divided
2 cups favorite salsa recipe
16-ounce can black beans
(drain, warm in pan, add 1/2 teaspoon ground cumin, salt and pepper to taste, mash slightly)
4 round corn tortillas
1 tablespoon butter
4 large eggs
1/2 cup crumbled cotija (or feta) cheese, or shredded monterey jack
optional additional garnish and toppings- chopped fresh cilantro, sliced/diced avocado or guacamole, sliced jalapeno, fresh corn
INSTRUCTIONS
Heat a skillet over medium heat; add 1 tablespoon of olive oil. When olive oil ripples, add salsa and cook over medium heat, stirring occasionally for about 10 minutes.
Meanwhile, begin warming beans in a separate pan.
Transfer cooked salsa to bowl; cover to keep warm.
Wipe out skillet; heat skillet over medium heat. Add tortillas in single layer to dry skillet (working in batches as needed), cook until warm and slightly toasted, turning as needed. Remove and cover to keep warm.
Heat skillet over medium heat. Coat pan with a bit of butter. Fry eggs to preference; season to taste with salt and pepper. Add additional butter as needed.
Serve fried eggs on warm tortillas, topped with cooked salsa, warmed black beans, and cheese. Add any optional chopped fresh cilantro, sliced/diced avocado or avocado, sliced jalapeno or fresh corn as desired.

SERVINGS: 8 Servings
INGREDIENTS
1 can (14 Oz. Size) Black Beans, Drained And Rinsed
1 cup Plain Nonfat Greek Yogurt
1/2 teaspoon Ground Cumin
1/4 teaspoon Paprika
1/4 teaspoon Salt
1/8 teaspoon Cayenne Pepper
1-1/2 Large Hass Avocados, Pitted
1/2 Lime, Juiced
1/4 cup Crumbled Queso Fresco
2 Tomatoes, Chopped
1/3 cup Sliced Black Olives
2 Green Onions, Thinly Sliced
2 Tablespoons Minced Cilantro
INSTRUCTIONS
Spread black beans in the bottom of a glass baking dish.
In a small bowl, whisk yogurt, cumin, paprika, salt and cayenne. Carefully spread the yogurt mixture over the black beans.
In a bowl, mash avocados with a fork and stir in lime juice. Spread over the yogurt. Layer the queso fresco, tomatoes, black olives, green onions and cilantro over the avocados.
Serve with pita chips, tortilla chips or fresh vegetables.

๐ถ Stuffed Peppers โค๏ธ
ยซ Recipe :
~
2/3 cup long grain white rice
Salt and freshly ground black pepper
6 bell peppers, any color (medium-large size)
1 Tbsp olive oil
1 1/4 lbs lean ground beef**
1 small yellow onion, finely chopped (1 cup)
3 garlic cloves, minced (1 Tbsp)
1 (14.5 oz) can petite diced tomatoes, drained
1 (8 oz) can tomato sauce
3 Tbsp minced fresh parsley, plus more for garnish
2 tsp Italian seasoning
1 cup shredded mozzarella cheese
Preheat oven to 400 degrees. Cook rice according to package instructions. Meanwhile, trim about 1/4-inch from tops of bell peppers and then remove stems, ribs and seeds. Fill a baking dish large enough to fit peppers with about 1/2-inch of water.
Place peppers upside down in water, cover with foil and bake 20 minutes.
Meanwhile heat olive oil in a large non-stick skillet over-medium high heat. Add onion and saute 3 - 4 minutes. Move onions to one far side of the skillet. Add beef in chunks, season with salt and pepper then let sear until browned on bottom, about 3 minutes.
Break up beef and toss with onions and continue to cook 2 minutes, add garlic and cook until beef is cooked through, about 1 minute longer. Remove from heat, drain off excess fat.
Stir in tomatoes, half of the tomato sauce (about 1/2 cup), cooked rice, parsley, Italian seasoning and season with salt and pepper to taste.
Reduce oven temperature to 350. Turn peppers upright, sprinkle inside peppers lightly with salt and fill with beef filling. Pour remaining tomato sauce over peppers. Cover with foil and continue to bake 20 minutes.
Remove from oven, sprinkle with cheese, return to oven and bake until peppers have reached desired tenderness, about 10 - 20 minutes longer. Sprinkle with parsley ยป.

Natureโs ultimate multivitamin in its active form. For some this may gross people which is cool but you may be missing out on vitamin A in particular which is extremely limited if you say you eat carrots ๐ฅ.
Modern day junk light exposure depletes our vitamin A requirements aswell as not being outdoors to real light

Ingredients
โข 125grams organic chicken liver
โข 1/2 tbsp EV Olive Oil
โข 1 courgette / zucchini
โข 1 medium sweet potato
โข 1/2 avocado
โข 1/2 tbsp each of cumin and coriander seeds - freshly grounded
โข handful of tomatoes
โข fresh basil

Recipe:
1. Heat wide pan on medium heat. Add 1/2 oil.
2. Spiralise the veg. Add the swt potsto first. Sautรฉ for 3 mins.
3. Add the courgette, continue for 3 more mins.
4. Add the tomatoes, add the spices, continue for 3 more mins.
5. Remove the veg on to warm plate.
6. Heat remaining oil in pan on medium high. Add the chicken livers cook for 2 minutes per side. Add splash of water to use as a glaze. Remove.
7. Plate up garnishing with fresh basil, season to taste.

ยซ Taco pancakes with homemade avo Nutella, anyone๐คช? Maybe Iโm not very original posting so well known taco pancakes ๐คทโโ๏ธbut always wanted to make my own platter and seeing how delicious they came out I couldnโt resist to take a picture and share it with you ยป โค๏ธ ๐๐๐
Recipe for vegan fluffy pancakes:
250 g flour
360 ml almond milk
1,5 tbsp apple cider vinegar
2 tsp baking powder
2 tbsp ground flaxseed
2-3 tbsp sugar
Recipe for homemade avocado nutella
1 c hazelnuts toasted
50g chocolatรฉ, melted
1 tbsp coconut melted
1/2 avocado
First Blend the hazelnuts and oil until smooth. Than Add melted chocolate and avocado and blend again until smooth.

8 cups mixed leaves
1 cup cooked fresh or frozen organic corn kernels

4 hard-boiled eggs, peeled and chopped
1 ripe avocado, diced
SWEET ONION DRESSING:
2 fresh garlic cloves, pressed
