Tamarind chicken wings.
In Dominica, there's an abundance of fresh fruits. This particular recipe highlights the use of tamarind. Its sweet and sour flavor provides the perfect balance and the addition of orange juice adds a refreshing brightness.
These wings are marinated in a blend of locally sourced fresh herbs and spices, then generously coated with a tantalizing tamarind glaze. While they were started on a grill and finished in the oven, you can customize the cooking method to your preference. Enjoy them on their own or pair them with your favorite side dishes.
