Even after what feels like 49675 years of making this ultra creamy Chocolate & Coconut Panna Cotta, I’m still obsessed with it! I love making this recipe for a quick, last minute dessert or picnic. I even made some for tomorrow’s road trip snacks too 😆. It’s so easy you can make it in under 5 minutes with only a handful of ingredients. If you’re new to my page, here’s my favourite + panna cotta recipe (also in my eBook Just Desserts)
INGREDIENTS
- 500ml coconut cream
- 2 tsp grass-fed gelatin
- 2 Tbsp water
- Your preferred sweetener to taste (I used pure monk fruit powder to taste)
- 1.5-2 Tbsp cacao powder
- 1 tsp vanilla powder or 2 tsp vanilla extract
- Optional: 1/2-1 tsp ashwagandha
METHOD
1. To a small saucepan, add the gelatin, water and cacao powder. Mix together to create a paste and get rid of any lumps. Set this aside for a minute to allow the gelatin to bloom and thicken.
2. Add the remaining ingredients to the saucepan and heat it on low-medium heat until the gelatin has dissolved. Make sure all the ingredients are evenly mixed through.
3. Taste the mixture and adjust any of the flavours or sweetness to your own tastebuds.
4. Pour the mixture into 2x small glass jars or mugs and place in the fridge to set.
5. When it's ready, serve with my homemade caramel granola from my eBook Just Desserts, fresh berries, grated chocolate on top, or plain! Grab a spoon and enjoy every silky smooth mouthful.

{Coconut Raspberry Jellies} It's December already! Time to start thinking about some simple and healthy treats for sharing with family and friends... How about these little coconut raspberry jellies? You can keep them in the freezer for when you need them! ❤️ I've also sent out lots more ideas in my Quirky Christmas newsletter today, so check you inbox! 😍
This is a super simple recipe! You can sweeten the jelly to your taste (use maple syrup if you prefer), and you can use either homemade coconut cream or tinned cream. (I used homemade and it separated a little, which actually looked really cool I thought, ha ha! The recipe for coconut cream is in both the Quirky Cooking and Life-Changing Food cookbooks.)
And by the way, that's vanilla powder not pepper in the jelly in case you were worried that my pepper addiction had gone too far... 😁😁

❤️ Coconut Raspberry Jellies ❤️
Coconut jelly:
250ml coconut cream
1 ½ Tbsp gelatine
50g honey
⅛ tsp vanilla powder or ¼ tsp vanilla extract
Raspberry jelly:
250g frozen raspberries
40g honey
1 ½ Tbsp gelatine
Method
1. Prepare moulds for jellies by placing them on a baking tray. Or line a small (26x19cm) rectangular dish with baking paper and set aside.
2. Coconut jelly: Place the coconut cream, gelatine, honey and vanilla in a heavy-based saucepan and warm, stirring, over medium heat until bubbles form on the edges. Remove from heat and pour into moulds or dish, filling half full. Place the tray or dish carefully into the freezer (making sure to keep level). Chill for at least 30 minutes or until firm before adding the next layer.
3. Raspberry jelly: Place raspberries, honey and gelatine into a heavy-based saucepan and heat over medium heat, stirring, until it begins to simmer. Reduce heat to low and keep stirring until raspberries have broken up, about 10 minutes. Strain jelly through a fine metal sieve into a bowl and allow to cool until room temp but not cool enough to set.
4. Pour raspberry jelly carefully over the coconut jelly to the top of the moulds or dish. Place back into the freezer to set for at least 30 minutes or until firm.
5. Pop jellies out of moulds into containers. Or if jelly is in
a dish, slice into 2cm cubes and place into containers.
Thermomix Notes:
To cook coconut jelly: Place all ingredients into TM bowl and cook 8 mins/80C/speed 2.
To cook raspberry jelly: Place all ingredients into TM bowl and cook 10 mins/90C/speed 2. Strain and continue as above.
Storage:
Store in airtight containers in the fridge for up to 5 days, or freeze for up to 3 months and thaw before serving.

Copper is an essential nutrient for overall metabolic function and whole-body health. But it means nothing unless it’s in its bioavailable form, Ceruloplasmin.

Skin conditions such as acne, eczema, rosacea and psoriasis are very prevalent. Many doctors will say that they’re incurable and that you just have to live with it. Some of us have more sensitive skin than others. I am one of those people. While I was in my teens, one dip in a chlorinated pool would have me red, itchy and rashy for the rest of the day and through the night. Showering off the chemicals wouldn’t even help and going to sleep was miserable. I had moderate eczema, chronic acne and rosacea.
From my lifetime of experience and observations of others, I believe that skin conditions mainly have an infection component and an amino acid deficiency component. I have experienced and witnessed non-inflammatory amino acids from raw goat dairy and bone broth miraculously clearing up my skin and others.
The infection component with skin is primarily fungal, and the most effective weapon against fungus on the globe is hyssop or the wild Mediterranean oil of oregano. Consuming it in all of its forms: crude herb, oil and juice is ideal. Research published in the Italian Journal of Food Science by Bendini showed that oregano helps to prevent lipid peroxidation, or the oxidation of fats. The breakdown products of unsaturated fats (especially omega-3s) decimate the skin and open the door to all kinds of infections. It is the volatile oils in wild oregano that are so the kryptonite to a very broad range of bacteria, viruses and fungus.
Other spices including thyme, basil, bay leaf, fennel, rosemary and sage are also powerful and can easily be included in gelatinous amino acid rich bone broths. Animal tissue and broths are my number one for optimal skin health. Skin health is more about our nutrition than it is the products we use on it. In fact, many skin products are detrimental or unnecessary. Other skin tips that have benefited me include: 1) being naked as much as possible to let the skin breathe, 2) limit polyunsaturated fat consumption and increase animal-source saturated fat, 3) consume wild oregano in all of its forms and douse your meals in the crude herb as often as possible, 4) turn off the Wifi router at night or ideally hard-wire your internet, and
