Nigerian Ofe Asha (Ashi Soup) Recipe 🍲

Hello guys! Today’s recipe is Nigerian Ashi Soup—rich, hearty, and packed with different meats and flavors.

Ingredients:

* Cow head meat
* Goat meat
* Shaki (tripe)
* Gizzard
* Stockfish
* Fresh fish & dried fish
* Snail
* Blended ashi
* Crayfish
* Fresh pepper
* Locust beans
* Bitter leaf
* Uziza leaf
* Palm oil
* Seasoning (salt, Maggi, onions)



Step 1: Cook the Meat

Start by placing your pot on the fire. Add:

* Cow head meat
* Goat meat

Season with salt and onions, then cover and steam for 10–15 minutes. Stir and add seasoning cubes (Maggi), then pour in some water and cook until the cow head is tender.

To avoid overcooking, separate the goat meat from the cow head once it’s partially done.



Step 2: Add Other Proteins

Add:

* Shaki
* Gizzard
* Snail
* Stockfish

Stir well and allow to cook. Then add your pre-soaked stockfish and scubian fish. Add locust beans and let everything cook together.

Carefully remove the fish to prevent it from breaking.



Step 3: Prepare the Soup Base

In a larger pot:

* Pour in the meat stock
* Add palm oil
* Add bitter leaf and uziza leaf

Cover and cook for about 5 minutes.



Step 4: Build the Flavor

Add:

* Fresh pepper
* Crayfish
* Shaki and cow head

Then add the blended ashi and stir until it fully dissolves.



Step 5: Combine Everything

Return all meats and proteins into the pot:

* Goat meat
* Stockfish
* Snail
* Gizzard
* Fish

Stir gently (so the fish doesn’t break), cover, and cook for 15 minutes.



Step 6: Final Touch

Open, stir carefully, and let everything blend beautifully. At this stage, your soup should look thick, rich, and very appetizing.



Serving 🍽️

Serve hot with any swallow of your choice:

* Pounded yam
* Eba
* Fufu
