Yesterday wasn’t the day for a complicated recipe… I was busy reorganizing my kitchen instead. 😅

I finally tackled all the drawers and shelves that had been waiting for me: the space under the sink, my vegetable drawer, and the baking ingredients cabinet 🧺

💡 A little tip: if you’re shopping for organizers, bins, or storage boxes, measure your drawers and shelves first—and bring a tape measure with you. It makes everything so much easier!

Sometimes, yes. But most of the time, I cook with dry-aged meat that I age myself at home.

During the aging process, the meat loses moisture, which concentrates the flavor and makes it much richer and more complex. It’s my favorite choice for steaks, tartare, and burgers 🥩

I love understanding the science behind cooking and refining every recipe until it feels just right.

Have you ever seen Buddha's Hand? Also known as fingered citron, it's famous for its incredibly intense citrus aroma. Centuries ago, it was even used to naturally fragrance homes 🪔

I've always loved citrus notes—they become even more beautiful when paired with the right ingredients.

My favorites are:

🍋‍🟩 Lime Basil — lime, mandarin, bergamot, and the fresh, spicy touch of basil.

🍋 Valencia — bright, juicy lemon and bergamot softened by delicate floral notes.

🍊 Palermo — mandarin, orange blossom, and smooth vanilla.

🔥 Dune — slightly bitter grapefruit with spicy pink pepper and warm cedar.

What I love most about gastronomy and fine dining is the courage to combine unexpected flavors.

It's not always about expensive or complicated ingredients - it's about how they bring out the best in each other.

Take these crispy potato nests with Parmesan, for example. The potatoes are light and delicate, while the Parmesan adds depth, richness, and that perfectly savory bite 🤤

Then there's the tuna cream - smooth, creamy, lightly smoky, with a bright burst of lime zest that lifts everything.

Finish it with caviar for texture and those little pops of flavor... and every bite feels special.

And of course, there's the sauce. A great sauce ties everything together, adding that deep umami flavor that makes every ingredient shine 🙂‍↕️
