Juice of 2 oranges + 1 lemon · 1 tbsp Bragg ACV · 1 tsp maple syrup · pinch of sea salt · top with water + ice
Same hydration as a sports drink, about 60p a bottle, nothing in it you can’t pronounce 💛
The trick to picnic salads that don’t go soggy: layer them in the right order. Dressing bottom, sturdy things next, leaves on top. Shake right before you eat.
The creamy ACV dressing keeps everything fresher for longer- the acid slows the oxidation.
One large jar:
Dressing → 3 tbsp Greek (or plant) yoghurt · 1 tbsp Bragg ACV · 1 tbsp olive oil · 2 tsp Dijon · salt + pepper
Butter bean base → 1 tin butter beans · chopped parsley · 1 grated garlic clove · zest + juice of ½ lemon
Layer from the bottom: dressing → butter bean mix → red onion → green olives → feta → cooked quinoa → cherry tomatoes → yellow pepper → cucumber → shredded lettuce on top
Seal. Chill. Shake before eating (or tip into a bowl).

🍋 Amalfi Lemon Marmalade Dressing
2 tbsp Amalfi lemon marmalade · 1 tbsp Bragg ACV · 3 tbsp olive oil · 1 tbsp lemon · 1 shallot finely diced · 1 tsp thyme
Toss with: quinoa, cherry tomatoes, cucumber, avocado, rocket, basil, toasted almonds
🍇 Ben Tirran Blackcurrant Preserve Dressing
1 tbsp Ben Tirran blackcurrant preserve · 2 tbsp Bragg ACV · 3 tbsp olive oil · 1 tbsp lemon
Toss with: giant couscous, charred peaches, cucumber, red onion, rocket, mint, pistachios
🌶️ Jalapeño Jam Dressing
3 tbsp jalapeño jam · 1 tbsp Bragg ACV · 2 tbsp olive oil · 1 tbsp lime · 1 tsp soy · 2 tbsp dijon · pinch garlic granules
Toss with: charred sweetcorn, little gem, red cabbage, avocado, spring onion, coriander, tortilla chips

🥜Satay Peanut Dressing
Near-empty peanut butter jar • 1 tbsp apple cider vinegar • 1 tbsp soy sauce • 1 tsp maple syrup • 2 tbsp warm water
Shake 20–30 secs until smooth. Add water if needed. Use on noodles, rice bowls, chicken or cucumber.
🍓Raspberry Vinaigrette
Near-empty raspberry jam jar • 1 tbsp apple cider vinegar • 2 tbsp olive oil • pinch black pepper
Shake 15–20 secs until glossy. Pour over leaves, goat’s cheese or salads.
🫙Classic Dijon Vinaigrette
Near-empty Dijon jar • 1 tbsp vinegar • 3 tbsp olive oil • ½ tsp maple syrup • ¼ tsp garlic granules • salt & pepper
Shake 20 secs, rest 5 mins. Use on salads, potatoes or greens.
