Veggie challenge. Day 2. Sweet potato, cheese and spring onion quesadilla. OMG! So nice. The flavours were amazing and I couldn’t stop thinking about how good it was all afternoon! You would never guess there were sweet potato in it. Filling too. 😁

Day one as a veggie almost done! 😁. Tea was delicious. Veggie chilli. I have never really thought much of veggie chilli before as I have always found it don’t have much depth of flavour but this was tasty. 👍🏼

Face mask Sunday! Love this one. The dark patches show where the impurities are!

Veggie Challenge | Jamie Oliver 10/05/2018

I love meat but it’s true that we eat too much of it. The consumption of meat as a source of protein has massively increased. A lot of the meat we eat today is highly processed and cheap. This demand has a negative effect on the environment but also our health. Obesity is at an all time high. We are practically three generations in where people have not been able to access proper food education. This is slowly changing in schools but it’s not soon enough. The NHS is on its knees. We all need to take some responsibility, so this is mine. I have signed up to do Jamie Oliver’s 5 day Veggie challenge starting on Monday.

It is only a small contribution but if we all do something small then big changes can happen. I will be helping the environment, contributing towards sustainability, saving money and my body will be a lot healthier. Win win I think. Bring it on! 👊🏼

Veggie Challenge | Jamie Oliver Pay just £2 for a whole week’s worth of recipes, including eight brand new veggie dishes created by Jamie. Who's in?!

This week we have acknowledged International Women’s day and tomorrow the UK will celebrate Mother’s day. It is fabulous to see women encouraging, supporting, guiding and complimenting each other. In a busy world, we can so easily get bogged down with trivia that we can forget that those women who stand beside us need to be celebrated not knocked down. We see it all the time ‘I don’t like her clothes, her hair, her makeup.’ The media are quick to knock down courageous mums, professionals and celebrities for being against the norm. Sometimes we don’t even realise our own negativity that we project onto others. ‘That’s never going to work...,’ ‘What are you wearing that for...?’ You won’t make any money doing that.’ ‘I wouldn’t do it that way.’ Maybe we should stop and think sometimes. Stop being dream stealers. If someone is excited about something or has achieved something. Let’s celebrate it. Let’s support them. Get excited for them.

I’m so lucky to have an amazing bunch of strong women in my life. All strong for different reasons. My mum is right at the top of the tree. Then my amazing sister. Both of whom have overcome life changing illnesses. I also lucky to have other powerhouse women in my family. I am grateful to still have two of my closest childhood friends in my life. Both are strong and independent women and are like an extension of myself. Both, I know would be there for me at the drop of a hat.

I am also grateful to have friends that have come into my life as I have grown up, through work and through having my gorgeous little boy. Some of which, I know, will be friends for life. Who knew you could get more ‘best’ friends in your twenties and thirties!? 🤣

As friends we play different roles in each other’s lives. I have a fab group of girlfriends. We celebrate each other’s successes, we laugh, (maybe sometimes cry), we dance, we moan, but best of all we tell each other how much worth we have and we value that worth.

We have to put it out there. We have to big each other up. We deserve it. Our ‘foremothers’ started an amazing job and they have passed on the mantle. We have to keep fighting for our place in the world. We have to link arms and support each other.

Tomorrow is not just Sunday. It’s a special day when we celebrate our own amazing mum and give thanks to her for raising a strong daughter. It may also be a day to celebrate being a mum and being thankful for all that is precious to us. But, it can also a day we celebrate all women. Especially our friends. We are all ‘Wonderwomen’ in our own way. So go and celebrate and be thankful for those who touch your life.

I love and am thankful for all the strong women in my life.
You know who you are. 😘😘.

How inspiring when young people are learning this ancient practice and benefitting from it. I think it should be available for both staff and pupils in all schools. We live such a fast paced life that we need to be able to relax and reinvest in ourselves. How can it not be a positive thing?

Who does yoga?
I started Yoga twice a week about 4 weeks ago because I suffer from a trapped nerve in my neck and I have to admit it does make me feel good afterwards. I have never been big on exercise 🙈 and require lots of motivation and the fact that we don’t have to physically exert ourselves helps! (Anything for an easy life!) oh and the teacher says I’m a natural...!Hold that thought. 🤣.
My neck is particularly painful today so I’m off now to see if it helps alleviate the pain. 🤞🏼.

Which type of exercise do you enjoy?
