Fussy Vegan in Galway

Another 2 tomatoes have popped up in the Greenhouse .. absolutely buzzing, as while I was away, the other 3 plants shrivelled up & I'm not sure if there is any saving them 🙈🙈

I'm loving spending time in the Greenhouse, planting seeds, watering crops, excited to see the progress every morning ❤️❤️

I would love some advice on how to dig a vegetable garden as the Greenhouse is great for starting seeds/ plants, but they grow so big, so fast .. they need to be transplanted outside to really thrive 🤔🤔

Photo Dump of meals over the past few weeks .. there were a few 'crazy busy so convenience days' which I didn't photograph as I hadn't the time 🙈🙈 but for when I had the time to cook, I had lovely Scran 😋🌱♥️

1) Vegan Mushroom Risotto with Aldi Ireland Garlic Bread 🍄🍚🥖

2) Vegan Breakie at Friars {Vegan Sausage Roll, Hash Browns, Beans & Mushrooms with a Vegan Hot Chocolate} 🫔🥔🫘🍄☕️

3 & 4) Mini~Me made an amazing Vegan Chicken Curry last week. It was absolutely epic 😋😋 She used the No Chicken Pieces from the freezer in Aldi & fried them on a low heat until they were cooked throughout. She used a Knorr acket of Curry Sauce {Medium} & when that was cooked & to her desired consistency, she added the No Chicken Pieces & 2 handfuls of Peas .. all served on a bed of rice. It was delish!! 🍛

5) My Healthy Vegan Dahl recipe that I got from my legendary friend, who also happens to be a banging Nutritionist 🍛😋🌱♥️

6 & 7) Vegan Bean Burrito that I got from An Bialann in UoG last week. Loved the addition of Coriander & Chilli. Defo need to start spicing up my food a bit more 🌯

8) Stew with Roasties, Stuffing & Sprouts from yday .. Stew: Vegan Mince from Aldi fried with mushrooms, Peas & Carrots added & then smothered in Gravy. Roasties: Maris Piper spuds, par~boiled, drained, shaken in the colander to roughen the edges & Roasted in oil & Rosemary for about 45 minutes. The trick is to heat the oil first so the spuds start roasting the second they hit the oil. Stuffing: Paxo. Sprouts: Par~Boiled until fork soft, Roasted in oil & a splash of Maple Syrup .. lovely Paddy's Day Treat 🥘🥔🫓🍈🇮🇪☘️💚🥰🌱♥️

Delish Vegan Pizza JJRuddles yesterday, before our 2nd flight got cancelled .. Marinara with red onion 🧅 & mushrooms 🍄

It was incredible .. we didn't even miss the cheese 😋🌱❤️

So, there we have it .. our 'honeymoon' was 2 days travelling to & from Shannon Airport, 11 hours waiting around & 2 cancelled flights. Devastated but it is what it is 😢💔
