Plan to Celebrate This Weekend with Special Amritsari Recipe
Ingredients
1 lb Fresh Water Fish Fillet * - Cut into bite size pieces
1 Cup Plain Yogurt
5 Tbsp Chickpea Flour (Besan)
1 tsp Ginger Paste
1 Tsp Garlic Paste
1/2 Can Club Soda - (You may use water or beer too, as per choice)
Few Drops of Orange Food Color - Optional
2 Fresh Lime
1 Cup Olive Oil - For Frying (You can use any light oil)
*** Spices ****
1 Tsp Carom seeds (Ajwain)
1 Tsp Red Chili Powder
1-2 Tsp Salt - as per taste
1 Tbsp Chat Masala - Optional
Instructions
In a large bowl, add yogurt, ginger+garlic paste, chickpea flour,color, all the spices.
Using a hand blender, mix everything to form a lump free batter.
Now add the fish fillet in the batter and evenly coat all the sides.
Cover the bowl with cling wrap or plate and place in fridge for 15 minutes (marination).
Heat oil in a wok on high flame for about a minute or till you see fumes coming out (you want the oil to heat evenly).
Now take out the fish from fridge and very carefully, add 2-3 pieces of fishes in the hot oil.
Reduce the flame to medium and fry the fish till they become crisp golden brown (takes about 2 minutes for each fish to cook on both sides).
Continue the process till all the fishes are fried and cooked.
Place the fried fish in a serving bowl, squeeze some fresh lime juice and sprinkle with chat masala.
Serve fresh and hot.

Today we came with Quick and healthy Breakfast in Matter of Minutes.When I get the chance to make my favorite breakfast on the weekend, I often choose to make Panner Sandwich & Poha.
1. Paneer Bhurji Sandwich :
Ingredients required:
4 Bread Slices (brown, preferably)
2 tsp. Butter or ghee
1 tbsp. Oil
1/2 tsp. Cumin
1 tsp. Gar
Salt
Pinch of turmeric
1-2 Green Chillies, chopped
Garam Masala
1 tsp Lemon Juice
1 medium-sized Onion
1 medium-sized Tomato
1/3 cup crumbled Paneer
How to make:
Smear butter or ghee on bread slices and toast until golden on one side.
Heat 1 tbsp. ghee in a pan and saute the garlic and cumin until it smells good.
Add paneer, lemon juice, green chillies and other condiments to the pan. Mix it all well. Do not cook further.
Place spoonfuls of paneer bhurji on the toasted bread slices. Place onion rings and tomato on it. Cover it with another toasted bread slice.
Halve the sandwich and serve as you like.
2. Mixed Sprouts Poha :
Ingredients You Will Need:
Poha – 200 grams
Mixed Sprouts – 100 grams
Chopped onions – 20 grams
Chopped green chilies – 20 grams
Mustard seeds – 1 tablespoon
Turmeric powder – 1 tablespoon
Coriander leaves – 1 tablespoon
Lemon juice – 1 tablespoon
Sugar – ½ tablespoon
Oil – 1 tablespoon
Salt – As per taste
How To Prepare Mixed Sprouts Poha:
Place poha/beaten rice in a sieve and wash it lightly. Drain the water and keep it aside for 10 minutes.
Take a non-stick pan and heat oil on a medium flame. Add mustard seeds, chopped onions and green chilies. Sauté till onions turn light brown.
Then add mixed sprouts and sauté for another couple of minutes on a medium flame.
Add salt and sugar to the sauté and cook for another couple of minutes.
Now add poha and a tablespoon of lemon juice and mix well. Cook it for 2-3 minutes while stirring it continuously to avoid overcooking.
Garnish with coriander leaves. Serve hot with tea or coffee.

This is a kind of one pot meal..I make this Chicken fried rice often, since it is so easy to make, but it taste so flavorful..It has become one of my main dish which i cook more often now. Our Chicken Fried Rice has everything you want and cooks up in just 15 minutes.
What You'll Need:
2 tablespoons sesame oil, divided
2 eggs, beaten
3/4 pound boneless, skinless chicken breasts, cut into 1/2-inch pieces
2 cloves garlic, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
3 cups cooked long grain rice
1 cup frozen peas and carrots, thawed
3 scallions, sliced
3 tablespoons soy sauce
What To Do:
In a large skillet or wok over high heat, heat 1 tablespoon oil. Add eggs and stir to scramble 1 to 2 minutes, or until fluffy; remove from skillet and set aside.
Add remaining oil to skillet and heat. Stir in chicken, garlic, salt, and pepper and cook 4 to 5 minutes, or until chicken is no longer pink. Add rice and stir-fry 3 to 4 minutes. Add peas and carrots, scallions, soy sauce, and eggs to skillet and cook 5 minutes, or until heated through. Serve immediately.
You can make fried rice with a single vegetables, mixed vegetables alone, eggs and vegetables, egg and meat skipping the vegetables, with mixed meat varieties etc. This procedure is a common one that you can follow to make your own variation of Indo-Chinese style fried rice.
