Kung Pao Chicken (500 g chicken thighs)
Ingredients
For marination
* 500 g boneless chicken thighs
* salt to taste
* 1 tsp black pepper
* 2 tbsp cornflour
* 1 egg
For gravy
* 6 tbsp oil
* 1 tbsp chopped garlic
* 1 tbsp julienne ginger
* 1 medium onion (cubed)
* 1/4 cup roasted peanuts
* 4–5 dried red chillies
* 3 tbsp soy sauce
* 2 tbsp oyster sauce
* 2 tbsp red chilli sauce
* 1 tbsp cornflour mixed with 1/2 cup water
Method
1. Marinate chicken with salt, pepper, egg, and 2 tbsp cornflour for 15–20 mins.
2. Add 4 tbsp oil and Fry the chicken until 2-3 mins max
3. Add 2 tbsp oil
4. Add red chilli ,garlic and ginger, sauté for 30 seconds.
5. Add onion and bell papers , Stir fry for 2-3 minutes, then add the sauce.
6. Add fried chicken,peanuts , cornflour slurry and salt to taste
7. Mix well on high flame until the sauce thickens and coats the chicken. ADD SOME SPRING ONION AS WELL ( I forgot🥹)
9. Serve hot.

Chicken Chukauni Recipe
For chicken marination
* Chicken breast: 500g
* Salt: to taste
* Turmeric: ½ tsp
* Kashmiri red chilli powder: 1 tsp
* Black pepper: ½ tsp
* Oil for frying: 1 tbsp or as needed
For curd mixture
* Curd: 250g
* Salt: to taste
* Monk fruit sweetener: as per taste /or you can use normal sugar
For tadka
* Mustard oil
* Turmeric: ¼ tsp
* Kashmiri red chilli powder: ½ tsp
* Kasuri methi: 1 tsp
Method
1. Take 500g chicken breast in a bowl.
2. Add salt, turmeric, Kashmiri red chilli powder, and black pepper. Mix well and marinate for 10mins.
3. Heat a pan and add a little oil.
4. Add the marinated chicken pieces and pan-fry until golden from outside and fully cooked inside. Keep it aside.
5. In a separate bowl, take 250g curd.
6. Add salt and monk fruit sweetener. Beat well until smooth and creamy.
7. Now prepare the tadka. Heat mustard oil in a small pan.
8. Add turmeric, Kashmiri red chilli powder, and kasuri methi.
9. Pour this hot tadka over the beaten curd and mix well.
10. Take the cooked chicken , add onion , green chilli and coriander and add the curd mixture into it. Mix gently.Serve as a high-protein side dish.

🍗 **Quick Chicken Biryani / Chicken Rice**
**Ingredients**
* Chicken – 500g
* Curd – ½ cup
* Ginger garlic paste – 1 tbsp
* Biryani masala – 1.5–2 tbsp
* Salt to taste
* Oil – 4 tbsp
* Onion – 2 big, thinly sliced
* Rice – 2 cups, soaked
* Water – approx. 3 cups
**Method**
1. Marinate chicken with curd, ginger garlic paste, biryani masala and salt.
2. Heat oil in a pressure cooker. Add sliced onions and fry till golden brown.
3. Add marinated chicken and cook till the raw smell goes away.
4. Add soaked rice and mix gently.
5. Add water. Normally 1 cup rice needs 2 cups water, but because curd and chicken release water, add 1 cup less than usual.
6. Pressure cook on high flame for 4 whistles.
7. Let it rest closed for 5 minutes.
8. Open, fluff gently and serve hot.
Cooking time: 15 minutes.

Stir Fry Paneer 🌶️✨
Paneer - 200g
1. Heat oil in a pan.
2. Add 2 medium onions, 1/2 capsicum, and green chillies (optional). Stir fry for 1–2 minutes.
3. Add ketchup (2 tbsp), soy sauce (2 tbsp), and chilli sauce (1 tbsp). Mix well.
4. Add paneer cubes and toss gently.
5. Stir everything together on high flame for 1 minute.
6. Finish with black pepper and serve hot.
Quick, spicy, and perfect with rice or noodles 🤍
Okay so I tried something completely new this week — Turkish Chicken.
Never made it before. Wasn't sure it would work.
30 minutes later I was standing in my kitchen genuinely impressed with myself. 😄

Paneer puff Recipe
Ingredients
* Paneer
* Onion – 2 medium, thinly sliced
* Capsicum – 1, sliced
* Garlic – 1 tbsp, chopped
* Ginger – 1 tbsp, chopped
* Green chilli – optional
* Salt – as needed
* Black pepper – as needed
* Sugar – a little
* Oil – as needed
* Egg wash or milk wash
Sauce mix
* Soy sauce – 2 tbsp
* Green chilli sauce – 2 tbsp
* Vinegar – 2 tsp
Method
1. Heat some oil in a pan.
2.Add thinly sliced onions and cook until fully brown ( caramelized)
3. Add chopped garlic and ginger. Sauté for a few seconds
4. Add capsicum and green chilli. Stir-fry for 2–3 minutes.
5. Add paneer and mix gently.
6. Add soy sauce, green chilli sauce, and vinegar.
7. Add salt, black pepper, and a little sugar.
8. Cook for 2–3 minutes by adding little water and cook until the filling becomes dry.
9. Let the paneer filling cool completely.
10.Take puff pastry sheets or patties dough and add the paneer filling inside.
11. Seal the edges properly.
12. Brush the top with egg wash or milk wash.
13. Bake in a preheated oven at 180–200°C until golden and crispy.
Your paneer patties are ready.
