Try These Mini Cauliflower Tortillas --->
You'll need:
• 1 head cauliflower
• ½ tsp salt
• 2 eggs
• ½ tsp pepper
Preheat oven to 180°C / 350°F. Line a tray with parchment paper.
Blend cauliflower until very fine. Microwave with salt for 5 min.
Squeeze out ALL moisture using a towel or cheesecloth.
Mix cauliflower with eggs + pepper. Form 6 balls, flatten into mini tortillas.
Bake 20 min, flipping halfway.
Lightly toast in a non-stick pan on both sides.
Serve with
Cheese, meat & greens — or turn them into mini pizzas. 🍕
