¼ tsp black pepper

¼ tsp nutmeg (optional)

For the Topping:

¼ cup grated Parmesan cheese

Directions

🤩 CAJUN RISOTTO 🤩

I've been AWOL for December as this is what I do every year. I've eaten and drank a stone and 10 pound in weight, so I'm fully focussed to loose 2 stone in the next 6 weeks. While piling my plate high and not feeling I'm missing out.

This beauty is what we've had for an early tea and OMG it was a taste sensation!

Would you believe it I had no clue what to make. I went to the fridge to see a lonely onion and red pepper then just went from there.

I'd never have believed a while back I would have so much confidence in the kitchen to knock a new recipe up, it's so satistying

The salmon fillets are as big and juicy as they look. I had some red pesto left in a jar, so decided to put 1/2 tbsp (1 swip) on top of each fillet then cook on 200 for 20 mins. WOW the flavours were unreal!!!!

For the Cajun risotto this was just a 'chuck it together and hope for the best'. Another winner I will be making this again, it's a gorgeous accompaniment to fish

All I did was fry off the onion and red pepper for a few mins.

Turned the heat down then stirred in 300g risotto rice with 1 pot Cajun and fried for a further minute.

Made up 700ml chicken stock, added 300ml and stirred for a couple of minutes. Added 1 cup of frozen peas and the remaining stock 100ml at a time stirring.
It takes about 25 minutes to cook and at the end I turned off the heat and stirred in 60g parmesan (1 healthy calcium per portion).

Salwaa's Meatball / Kebab Curry

Kebab Ingredients:
500 gram minced meat
1 large onion, chopped
2 green chillies finely cut (more or less according to taste)
2 ½ tablespoon chana/pea flour
salt to taste
1 egg
1 teaspoon red chili powder
1 teaspoon crushed ginger
1 teaspoon crushed garlic

To make the kebabs:
Mix the mince meat with all the other ingredients.
Make small balls with this mixture.

3-4 hardboiled eggs cut in halve or leave whole. Keep aside

Sauce ingredients:
2 teaspoons ground coriander
1 teaspoon turmeric
2 large onions, finely chopped
1 teaspoon garam masala
3-5 cloves garlic, grated
2 tomatoes, finely chopped
salt to taste
1 teaspoon crushed ginger
1 teaspoon red chili powder


To make curry sauce:
For the curry, stir fry the onions, garlic and ginger till golden brown.
Add thinly sliced tomatoes X2 and cook for further 5 minutes.
Mix in the rest of the curry ingredients with enough water to make gravy.
Bring it to a boil lower the heat and simmer for about 15 minutes until the gravy is nice and thick. Add the small balls of kebabs and simmer at low temperature for 20 minutes. Do not stir during the first 10 minutes after the kebabs have been added, IT WILL BREAK.

Add hardboiled eggs. Slightly shake the pot.

Garnish with chopped dhanya leaves before serving.
Serve hot with boiled white rice or roti
