I love Chinese egg tarts. It’s one of my favorite things to get from Chinese bakeries. The sweet pastry shell complements the egg custard so well. 😍😍
INGREDIENTS :
225 g plain flour
125 g unsalted butter softened
55 g icing sugar
1 egg whisked
a dash of vanilla extract
FOR THE CUSTARD :
2 eggs
73 g caster sugar
150 g hot water
57 g evaporated milk
1/2 tsp vanilla extract
INSTRUCTIONS :
1)Preheat oven to 400F. Grease your egg tartlet molds and place onto baking sheet.
2)To make the tart crusts, first cream the butter and sugar with an electric mixer set at a medium speed until the mixture is smooth, fluffy, and light in color. Adjust the mixer speed to low and add the egg in two batches only adding the second batch once the first one is incorporated. Add the vanilla and mix until combined. Add the flour and continue mixing until a dough is formed.
3)Take a chunk of dough and put into an egg tartlet mold. Using your fingers, press and spread the dough into the mold until it fully covers the inside of the mold. The bottom of each tart shell should be thinner with the top edge slightly thicker.
4)While the oven preheats, make the custard. Heat the water in a small saucepan until it's hot but not boiling. Add the sugar and stir until the sugar is dissolved. Remove the pan from the heat to cool.
5)In a large bowl, whisk the egg and evaporated milk until combined. Add the cooled sugar water and mix with an electric mixer set to a low speed until the mixture is frothy with little bubbles. Place a fine mesh strainer over a bowl and strain the mixture. The mixture should be completely smooth with no bubbles.
6)Spoon the custard into the tart molds. Transfer the tarts to the oven and bake them for 10 to 15 minutes or until the edges are lightly browned. Lower the heat to 350F (180C) and bake the tarts for 10 to 15 minutes or until the custard has lightly puffed in the center. Open the oven door one to two inches and bake the tarts until they are cooked through.

Ingredients :
1 cup dried adzuki beans
6 to 8 cups water
1 strip dried tangerine, or fresh orange peel
1/4 to 1/2 cup dried lotus seeds
6 to 8 tablespoons brown sugar
Steps to Make It :
1)Gather the ingredients.
2)Soak the azuki beans in water overnight to soften. (While the beans won't have completely softened, they will have expanded considerably). Drain.
3)About 2 hours before making the soup, place the dried lotus seeds in a bowl with enough water to cover.
4)In a medium saucepan, bring the 6 cups of water with the tangerine peel to a boil. (The soup can be thicker or thinner as desired. We usually start with 6 cups of water, and then add more boiling water at the end with the brown sugar if we want to thin it a bit.)
5)Turn the heat down, add the adzuki beans and lotus seeds and simmer, partially covered, for 1 to 1 1/2 hours, until the beans are softened to the point where they are just beginning to break apart.
6)Add the brown sugar and stir until dissolved. Taste and add more sugar if desired. (We usually start with 1/3 cup and then add more, 1 tablespoon at a time, as needed). Thin the soup by adding boiling water if desired.
7)Remove the dried tangerine peel before serving.
8)Serve the red bean soup hot or cold.
9)Enjoy!

Tacos are thought to come from Mexico, long before the Spanish arrived. Ancient Mexicans used freshly made, soft, flat corn tortillas and gave them with fillings like fish and cooked organs. It was a staple meal that provided vital nutrients and energy to those who consumed it.
INGREDIENTS:
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon dried oregano
1/2 teaspoon garlic powder
Kosher salt and freshly ground black pepper, to taste
1 1/2 pounds boneless, skinless chicken thighs
1 tablespoon canola oil
12 mini flour tortillas, warmed
1 cup pico de gallo, homemade or store-bought
1 avocado, halved, peeled, seeded and diced
1/2 cup chopped fresh cilantro leaves
1 lime, cut into wedges
DIRECTIONS:
1)In a small bowl, combine chili powder, cumin, paprika, oregano, garlic powder, 1 teaspoon salt and 1/2 teaspoon pepper. Season chicken with chili powder mixture.
2)Heat canola oil in a large cast iron skillet over medium high heat. Working in batches, add chicken to the skillet in a single layer and cook until golden brown and cooked through, reaching an internal temperature of 165 degrees F, about 4-5 minutes per side. Let cool before dicing into bite-size pieces.
3)Serve chicken in tortillas, topped with pico de gallo, avocado, cilantro and lime.

Bread rolls
INGREDIENTS
120ml (½ cup) warm milk;
50g (4 tbsp) sugar
7g (1 1/2 tsp) dry yeast;
35g (3 tbsp) butter, softened;
5g (1 tsp) salt;
1 egg;
300g (2 1/2 cups) 00 flour;
40g (3 tbsp) butter;
Jam.
METHOD
Whisk warm milk with yeast and egg. Add flour and salt, knead to combine. Set aside for 15 minutes.
When the dough comes together, add softened butter and knead for 10 minutes. Form the dough into a ball, cover and set aside for 1 hour.
Cut the dough into 9 pieces and roll each into a ball.
Roll out each ball of dough and form a bread roll with jam inside, as shown on the video.
Place bread rolls into a 20 cm baking pan and set aside for 1 hour.
Brush with egg wash and bake for 12-15 minutes at 180C/350F.

The Best Cheesecake Recipe 🍰
Ingredients
For the crust:
1 3/4 cups (230g) Graham cracker crumbs (from about 15 Graham crackers)
2 tablespoons sugar
Pinch salt
4 tablespoons plus 1 teaspoon (60g) unsalted butter (if using salted butter, omit the pinch of salt), melted
For the filling:
2 pounds (900g) cream cheese, at room temperature
1 1/3 cups (270g) sugar
Pinch salt
2 teaspoons vanilla extract
4 large eggs, at room temperature
2/3 cup (160ml) sour cream, at room temperature
2/3 cup (160ml) heavy cream
For the sour cream topping:
2 cups (475ml) sour cream
1/3 cup (35g) powdered sugar
1 teaspoon vanilla extract
For the raspberry sauce:
12 ounces (340g) fresh raspberries
1/2 cup (100g) sugar
1/2 cup (120ml) water
Method ;
Prepare the crust
1)Preheat the oven to 350°F.
Arrange a rack in the lower third of the oven and preheat to 350°F (175°C).
2)Process the crust ingredients:
Pulse the graham crackers in a food processor or blender until finely ground. Put in a large bowl, and stir in the sugar and salt. Stir in the melted butter.
3)Press into a springform pan:
Use a 9x2 3/4-inch round springform pan. Gently press down on the crumbs using your fingers, until the crumbs are a nice even layer at the bottom of the pan, with maybe just a slight rise along the inside edges of the pan.
4)Bake:
Place the pan on a baking sheet and bake at 350°F (175°C) for 10 minutes. Remove from the oven and let cool.
Lower the oven temperature to 325°F (160°C).
While the crust is cooling, you can skip ahead and start on the filling. Wait until the crust has cooled to wrap the pan in foil in the next step.
5)Triple wrap the pan in heavy duty foil:
Prepare the springform pan, so no water leaks into it while cooking. Place a large 18-inch by 18-inch square of heavy duty aluminum foil on a flat surface.
Place the springform pan in the middle of the foil. Gently fold up the sides of the foil around the pan. Make sure to do this gently, so you don't create any holes in the foil.
If there are any holes, water will get into the pan and ruin the crust.
Press the foil around the edges of the pan. Place a second large square of foil underneath the pan, and repeat, gently folding up the sides of the foil around the pan and pressing the foil against the pan.
To be triply safe, repeat with a third layer of heavy duty foil. Gently crimp the top of the foil sheets around the top edge of the pan.
