Ayam Goreng Kunyit (Turmeric Chicken)
-INGREDIENTS-
1) 4 (340 g per chicken) chicken thighs, deboned but skin-on
2) 2 cloves garlic, minced
3) 1 1/2 tablespoons honey
4) 1 tablespoon oyster sauce or soy sauce
5) 3/4 teaspoon turmeric powder
6) 1 pinch cayenne pepper
7) 1 pinch salt
๐ 1 tablespoon oil
-Instructions-
1) Make the paste
In a pestle and mortar, pound together garlic, turmeric with some salt until it becomes a fine paste.
Combine the paste with the chicken, along with the cornflour, soy sauce, some sugar and some turmeric powder let it marinate for about 10 minutes.
2) Deep-fry the chicken
As the chicken marinates, prep the vegetables. Slice up the onions, chili and carrot into strips about the same size
In a wok, add in some oil and deep fry the marinated chicken on high heat for 3 minutes, and turning before reducing the heat to medium for a following 3 minutes.
Turn the chicken occasionally to ensure browning on all sides.
After 8 minutes the chicken should be cooked. remove the chicken and drain on a kitchen towel.
NOTES ;
You may use chicken breast, chicken drumsticks or wings for this recipe. You may also bake or grill this recipe. If baking, bake it at 400F for 20 minutes are until the chicken is slightly charred.

Onde-onde (also spelled as ondeh-ondeh)
-INGREDIENTS-
1)250gram of glutinous rice flour
2)200 ml Pandan juice
3)100gram of grated coconut
4)1 pinch sea salt
5)150gram of Gula Melaka or palm sugar, finely chopped
-INSTRUCTIONS-
1)In a large bowl, combine the glutinous rice flour with Pandan juice and knead lightly. Pinch a small piece of the dough (about 40) and drop it into boiling water.
2) When the dough rises up the surface, remove it with a slotted spoon and shake off the excess water. Mix it back into the main dough and knead well to form a smooth dough. Cover the dough and set aside for about 15 minutes.
3)Mix the grated coconut with a pinch of salt and steam for about 2 - 3 minutes and let it cool completely.
4)Bring a pot of water to boil. Pinch a small piece of dough (about 15 g each) and flatten lightly. Fill the center of the dough with Gula Melaka or palm sugar. Roll it in your palms to form a smooth ball. Repeat the same until all ingredients are used up.
5) Cook the onde-onde balls in boiling water. When they float to the surface, remove them with a slotted spoon and shake off the excess water. Coat the onde-onde with grated coconut and serve immediately.
Noted ; Please use Gula Melaka if you can. The best Gula Melaka should be golden brown in color and not so solid.
