Yes, sweet potatoes can be used to make a variation of Akara, often called "sweet potato akara" or "potato balls/fritters". This is an alternative to the traditional Akara, which is typically made from black-eyed peas or beans.
Sweet potato akara is a popular snack or breakfast item, particularly in some Nigerian communities where sweet potatoes are known as "dankalin hausa".
Key Differences from Traditional Akara
Main Ingredient: Sweet potatoes (mashed or grated) instead of bean paste.
Texture and Taste: The resulting fritter has a sweeter taste and a slightly different texture compared to the savory, beany flavor of traditional Akara.
Preparation: While traditional Akara requires soaking and grinding beans, the sweet potato version typically involves boiling and mashing or grating the sweet potatoes first.
How to Make Sweet Potato Akara (General Steps)
The general process is similar to making fritters or potato balls:
Prepare the Sweet Potatoes: Peel, wash, and boil the sweet potatoes until soft. Then mash them thoroughly and let them cool.
Mix Ingredients: Combine the mashed sweet potatoes with chopped onions, peppers (like red chili or scotch bonnet), salt, and other seasonings. Flour and eggs may be added to help bind the mixture.
Form and Fry: Scoop the mixture and shape it into small balls or patties, then deep-fry them in hot vegetable oil until golden brown
