A while ago I made this delicious Cardamom and lemon cake with vanilla mascarpone from πŸ‹ besides there amazing product I received a recipe book with lots of goodnessessss, and this was one of them 🀀

Last week, time wasn’t my friend. Even though I was standing in my kitchen every day, I just couldn’t find the time to share it or to make photos πŸ“Έ but I confirm: the only thing I’m thinking about 24/7 (besides my beautiful girl πŸΆπŸ˜„) is food. What am I going to make next? What spices should I use? How can I improve it next time? And of course, who wants to taste it? Cause sharing is caring πŸ€—

I can’t share this recipe with you but I’ve shared this treat with my friends and this recipe has definitely been approved by everyone 😍

Banana protein chocolate chip Cookie πŸͺ with pecan nuts πŸ™ŒπŸ½

A few days ago I got an amazing package from . I literally opened a box coming straight from heaven πŸ™ŒπŸ½ Filled with nuts and seeds and dried fruit 😍 of course the day after I wanted to make something with it!

For this recipe I got inspired by . She has an incredible page with lots of healthy and delicious recipes! 😍 highly recommend to follow her page!!😍

Okey, it’s cookie-time now πŸͺ
Ingredients:
β€’ 2 bananas
β€’ 2 tbsp
β€’ 3 big tbsp coconut oil (1/3 cup melted coconut oil)
β€’ 1 cup gluten-free flour
β€’ 1/3 cup coconut flour
β€’ 1 scoop (12,5g) protein powder
β€’ 2 tsp baking powder
β€’ 1/4 cup dark chocolate chips
β€’ 6 pecan nuts (crushed)
β€’ 4 tbsp unsweetened oat milk (or other plant based milk)

Method:
Mash the bananas in a bowl with a fork. In a separate bowl, combine all dry ingredients together (gluten-fee flour, coconut flour, protein powder, baking powder, chocolate chips and pecan nuts). Melt the coconut oil for 1” in the microwave. Add the coconut oil, mashed bananas and milk to your dry ingredients. Stir everything together with a wooden spoon. Take one spoon of the cookie though and roll the cookies in your hand palm. Place cookies on a oven tray covered with baking paper and flat them by pressing them gently. Bake for 25” on 180Β°C. Use standard bake option.

A Classic but yet healthier marble cake πŸ’›πŸ–€

Thanks to you can transform practically any kind of classic recipe into something healthier! 😍

I haven’t made a marble cake since ages but this one is definitely one I’d like to share with you πŸ₯° give it a try and let me know what your thoughts are on this one πŸ€—

Ingredients:
β€’ 3 eggs
β€’ 1/3 sugar
β€’ 100gr unsalted butter (melted)
β€’ 1 1/2 tsp vanilla extract
β€’ 1/2 cup unsweetened yoghurt
β€’ 1 1/3 cup gluten free plain flour
β€’ 2 tsp baking powder
β€’ 1/2 tsp baking soda
β€’ 2 tbsp unsweetened chocolate powder

How to?
preheat your oven on 180Β°C. Whisk the eggs and sugar together in high speed during 5 minutes or until the size has doubled. Add the melted butter, vanilla extract and yoghurt. Mix all dry ingredients (excepted the chocolate powder) together in a separate bowl. Add the wet ingredients (egg mixture) to your dry ingredients. Pour half the batter in a separate bowl and add in one bowl the chocolate powder. Stir until well combined.

Cover your baking pan with baking paper and pour the batter alternatively in it. Use a knife and go zig-zag through your cake to create the marble effect.

Bake for 40” (use standard bake function, not β€˜fan bake’)

Stuffed kumara 🍠 an easy dish made with only 5 main ingredients, olive oil and some spices. I’m sure most of us will have those ingredients in their pantry, fridge and freezer.

Ingredients (serves 2 people):
β€’ 2 big kumara
β€’ 1 can chickpeas (drained)
β€’ Frozen chopped spinach (approx. 8-10 frozen blocks)
β€’ 2 Garlic gloves (chopped)
β€’ Feta cheese (crumbled)
β€’ Olive oil
β€’ Ground Smoked paprika

Method:
Preheat your oven on 180Β°C. Half the kumara lengthwise and put them upside down for approx. 30” until soften (this can differ depending on the thickness). You know they’re ready if you easily can prick your fork into it. While your kumaras are baking defrost your spinach in a microwave and prepare your chickpeas in a pan with olive oil, garlic, smoked paprika and salt until roasted. Take the kumara out the oven and scoop the flesh out. Combine it with the defrosted spinach in a separate bowl (you can add some nutmeg to it if you want). Refill the kumara with your mixture, top it with the roasted chickpeas and feta cheese. Optional: Grill them for another 8” in the oven on 200Β°C.

A Quick and easy lunch.πŸ₯—

I used some real squeezed lime juice from to give it that refreshing feeling. Their products are awesome and an affordable way to incorporate lime, lemon, turmeric or ginger into your dishes.πŸ’š In other words, a way to add some REAL flavors to your dish. πŸ™ŒπŸ½

Whether you don’t have the time or you’re on the go, my nutritious mixed bean quinoa salad πŸ₯— will give you the fuel you need to stay active the entire day!

So, Let’s go:πŸƒπŸ½β€β™€οΈ

Ingredients:
β€’ Cooked quinoa
β€’ 1 can red beans
β€’ 1 can cannellini (white) beans
β€’ 3 tbsp freshly squeezed lime juice from
β€’ Mushrooms
β€’ 1 Garlic glove
β€’ Approx. 12 almonds
β€’ 1 tsp cumin seeds
β€’ Fresh mint leaves (approx. 10 leaves)
β€’ Crumbled feta

How?
(If you haven’t cooked the quinoa, cook it first and set aside.)
Start by chopping the mint leaves and grinding the almonds and cumin seeds together. Fry the mushrooms and garlic together and let it cool down. Strain the red and white beans and mix them together in a bowl. Add the grind almonds and cumin seeds, mint, lime juice, pepper and salt to the mixed beans. Add the garlic mushrooms and stir together. Pour yourself some quinoa in a bowl. Bring some of the flavored beans to it. Top with some crumbled feta and voilΓ  ....

Bananassss 🍌 For those who likes bananas, you probably will love my banana squares!! 😍 It’s sooo easy to make and so nutritious that it almost would be a shame not to share it!
Just to make it even healthier I’m using spreadable fruit instead of normal jam. I just love their products! πŸ’•You don’t even taste it’s a sweetener and it’s just so delicious!🀀

I’d say give it a try and let us know!πŸ₯°

Ingredients:
β€’ 1/2 cup almond flour
β€’ 1/3 cup coconut flour
β€’ 1 scoop vanilla pea protein powder from (this is optional but just add extra flavor and proteins to it)
β€’ 2 tsp (gluten free) baking powder
β€’ 3 tbsp spreadable fruit
β€’ 2 bananas
β€’ 1 egg
β€’ 1/2 cup unsweetened Greek yoghurt
β€’ 2 tsp Shredded coconut

Method:

Preheat your oven on 180Β°C.

Bring all dry ingredients together in a bowl (almond flour, coconut flour, protein powder and baking powder).

In a separate bowl, smash the bananas with a fork, add the yoghurt and egg to it. Whisk everything together.

Add your dry ingredients to it and keep whisking together.

Cover your baking trail with some baking paper. Pour half of the batter in your trail and spread 2 generous tbsp of spreadable fruit on top your first layer. Pour the other half on top of it. Spread another tbsp fruit spread in the middle and top it with some shredded coconut.

Bake for 50 min on 180Β°C.

Allow to cool down and enjoy! πŸ‘©πŸ½β€πŸ³

and I was soo lucky to have received the perfect topping that matches my protein crepes perfectly πŸ’•

Recipe for gluten free protein crepes:

Ingredients:
β€’ 300gr gluten free plain flour
β€’ 500ml oat milk
β€’ 2 scoops (25gr) plant based protein powder from
β€’ 1 tsp baking soda (or a pinch of salt)
β€’ 2 eggs

Topping: almond butter, banana slices 🍌and some no added sugar chocolate topping from

How?
-> mix the gluten free flour, protein powder and baking soda together. Add the eggs and pour the oat milk gradually. Mix until you get a perfect smooth texture. Keep aside for 15”. Heat your baking pan and bake your crepes. Make sure you divide the batter equally in your pan by tilting the pan gently.
Bake all your crepes and enjoy with some fruit and delicious toppings! πŸ’•
