Bourbon lovers, we all agree on one thing—it’s downright delicious. But there’s a lot more to this legendary spirit than meets the glass! Here are 8 fascinating facts that might just surprise you:
✅ The Origins Are a Bit Murky – Some say Baptist minister Elijah Craig first charred oak barrels in 1789, while others credit Jacob Spears for branding his whiskey as "Bourbon" in Kentucky’s Bourbon County.
✅ George Washington Played a Role – The 1791 Whiskey Tax forced rebellious distillers west to Kentucky, where they flourished. The tax was repealed in 1802, and bourbon took off.
✅ Rum’s Loss Was Bourbon’s Gain – When Congress taxed rum and molasses, Americans turned to whiskey—especially affordable Kentucky bourbon.
✅ It Starts as ‘White Dog’ – Before aging, bourbon is a clear, high-proof liquid known as "white dog." Time in oak barrels is what gives it that signature amber color and smooth flavor.
✅ No Aging Rules (Sort of) – Bourbon has no minimum aging requirement, except for "straight bourbon," which must be aged at least 2 years. Some bourbons mature for just a few months, while others age for over a decade.

When aging rum, one of the biggest decisions distillers face is whether to use new barrels or used barrels—and the choice has a significant impact on the final flavor profile.
Used Barrels: The Traditional Choice
Most rum producers prefer aging in used barrels, particularly ex-bourbon barrels. Bourbon barrels, by law, can only be used once in bourbon production, making them widely available and affordable. These barrels still contain residual compounds from the bourbon, which contribute to the rich caramel, vanilla, and spice notes found in aged rum.
New Barrels: A Bolder Approach
While less common, some rum distilleries choose new barrels—often made of American or French oak—to introduce stronger wood influence. New barrels provide robust tannins, heavy oak, and intense spice notes, but they can sometimes overpower the delicate flavors of rum.
Many distilleries even blend rums aged in both types of barrels to create unique flavor profiles. Whether you prefer the traditional approach or a bolder, wood-forward rum, both options offer exciting possibilities in the aging process.
