Chicken parmigiana

Ingredients:
4 x 150g skinless chicken breast fillets
olive oil cooking spray
60g baby spinach leaves
400g jar thick Italian tomato sauce
1/2 cup grated light mozzarella 25% less fat cheese
green salad, to serve
crusty bread, to serve

Instructions:
Preheat oven to 180°C. Put chicken breast fillets onto a flat surface and spray with olive oil. Season with freshly ground black pepper. Heat a non-stick frying pan over medium heat. Add 2 chicken fillets and cook for 3 minutes on each side or until cooked through. Transfer to a large plate. Cover to keep warm. Cook remaining fillets.

Put cooked chicken breasts onto a baking tray. Top with spinach leaves and tomato sauce. Sprinkle with cheese. Place in oven for 5-8 minutes or until cheese has melted. Serve immediately with green salad and crusty bread.

Serves: 4

7 Secrets to Cholesterol Management

Secret #6 – It’s OK to Go Nuts

Nuts are one of the best plant sources of protein. They are rich in fiber, phytonutrients and antioxidants such as Vitamin E and selenium.

Nuts are also high in plant sterols and fat - but mostly monounsaturated and polyunsaturated fats (Omega 3s - the good fats) which have all been shown to lower bad (LDL) cholesterol.

Walnuts and almonds seem particularly beneficial in reducing blood cholesterol. Rich in polyunsaturated fatty acids, walnuts also help keep blood vessels healthy.

The best way to reap the health benefits of nuts is to eat them as a replacement for foods high in saturated fats, such as meat products. Just make sure the nuts you eat aren’t salted or sugar-coated; raw is usually best.

To avoid eating too many nuts, which could result in weight gain (e.g. adding nuts to your diet rather than using them as a substitute food), replace foods high in saturated fat with nuts. For example, instead of using cheese or meat in your salad, add a handful of walnuts or almonds.

Bean, corn and zucchini quesadillas

Ingredients:
8 flour tortillas
400g can red kidney beans, rinsed, drained
1 cup corn kernels, drained
1 medium zucchini, trimmed, finely diced
1 cup low-fat grated cheddar cheese
ground black pepper, to taste
2 large tomatoes, diced
large green salad, to serve

Instructions:
Sprinkle a tortilla with one quarter of beans, corn, zucchini and cheese. Season with pepper and place another tortilla on top. Repeat with remaining tortillas.

Heat a large frying pan over medium-high heat and spray with oil. Add 1 quesadilla and cook for 2 minutes, until golden. Carefully turn quesadilla out onto a large plate. Slide back into pan and cook other side for a further 2 minutes, until golden. Repeat with remaining quesadillas.

Cut quesadillas into quarters and top with diced tomato. Serve with a green salad.

Variations:
Add tuna, prawns or white fish, some coriander and a pinch of cayenne pepper for a family-friendly meal where seafood is the star!
