Tasty Pistachio Coconut Pancakes that are healthy and easy to make! 🥞

Ingredients (2 servings):
1 cup rolled oats
1/2 cup milk of your choice (creamier option: coconut milk)
1 tsp baking powder
1 pinch salt
2 ripe bananas
oil for cooking (olive oil or coconut oil work great)
2 eggs (or 2tbsp chia seeds)

Toppings:
1 ripe banana
handful of pistachios (or nuts of your choice)
1/4 cup maple syrup
coconut flakes

Instructions:
In a blender, combine all pancake ingredients until smooth. Spray or drizzle oil in a non-stick pan and heat on low-medium heat. Pour in a small amount of the batter, the pancakes should be small and thick. When bubbles are formed, the other side is done. Time to flip! Have a peek at the underside after a 1-2min, when it’s nice and brown, it’s ready! Meanwhile, heat a bit of oil in a small pan over low heat. Add banana and ¼ cup maple syrup. Cook until bananas are softened and syrup begins to simmer, about 4-5min. Top pancakes with bananas, more maple syrup if desired, pistachios and coconut flakes and serve warm 🥞🥞🥞

Directions
You can use a spiralizer to make zucchini noodles but there are other options as well! It´s up to you whether or not to peel the zucchini. Trim the ends off the zucchini before inserting in spiralizer. When finished, dress up the noodles, toss with any of your favorite sauces and serve just like you would pasta 👌🏼

1 1/2 cup almond milk (or milk of your choice 🥛)
1/4 cup oats
Optional: 1tsp natural peanut butter
