Oatmeal is not just great with cinnamon and raisins or maple syrup and apples—it can be a really delicious base for a filling, savory breakfast too. With the addition of elements of a classic diner breakfast, this bowl will keep you full throughout the morning, thanks to the protein from the fried eggs and fiber from the oats. Bacon, scallions, and cheddar cheese make for a salty, cheesy, flavorful dish that is also customizable. Oats are so versatile: Try it with other veggies, fresh herbs, olive oil, or even a drizzle of hot sauce to make this recipe your own. It's perfect for when you don't want a sweet breakfast and want to include this heart-healthy grain. (You could even make this recipe for dinner.)

3 strips bacon, diced
1 cup water
1 large scallion, chopped, whites and green parts separated
1 tablespoon unsalted butter
1 teaspoon kosher salt, or more to taste
3/4 cup quick-cooking oats

Freshly ground pepper, to taste
2 tablespoons heavy cream

If you're into meal prep or want to start planning ahead for the workweek, these delicious muffins are a great grab-and-go breakfast that you can make ahead, refrigerate or freeze, and warm up in the microwave before running out of the house. Or sit down and enjoy with a cup of hot coffee. Great for kids' lunch boxes and snacks, too, they are filled with fiber from oats, and have deliciously sweet banana flavor, without the loads of sugar that come in store-bought or bakery-made treats. If you have some ripe bananas around, put them to good use and make a batch of muffins.
The deliciously crisp oat and cinnamon crumble topping on top can be optional, so if you want to keep them more for breakfast and less as a treat, skip it, but if you want a more decadent treat, go ahead and bake them with the crumble. Besides the flavor, it gives the muffins added texture and visual appeal.

Shakshuka is a Middle Eastern and Mediterranean dish of eggs poached in a sauce with spices, served for breakfast, brunch, or even sometimes lunch. Although the most common version includes tomatoes and peppers in the sauce, vibrant green versions are also popular.
What constitutes green can be up to you, but spinach is the most common base. However, other hearty vegetables such as kale, Swiss chard, and broccoli rabe also work extremely well in this dish since the tough greens get the benefit of some simmering to soften them.

Once the base green sauce is cooked, you can poach the eggs entirely on the stovetop or cook them in the oven for a few minutes to set. Ideally, the finished eggs should have set whites and still runny eggs to mix into the sauce and vegetables. Use your favorite bread to dip into the mixture and spoon out the egg-covered greens.
Spices can vary, but are likely to include cumin and some form of heat such as red pepper flakes. Similar in style, Mexican huevos rancheros tend to have a very spicy sauce, whereas the Middle Eastern version can be mild or hot. But feel free to customize this dish with your favorite spices and greens for a great egg breakfast.
