Dinner tonight was Instant Pot Chicken Dumplings. It was good. We used a can of Frichik instead of chicken.

For dinner the other day we tired this red curry recipe and really enjoyed it. We made a few changes, which I will list below, but I encourage you to give this recipe a try.

Changes from original recipe:
* We used white rice instead of basmati rice (what we had in hand)
* We used tofu instead of chicken (we fried it in a separate pan while the broccoli and spices cooked and then added to the mixture a little before it was all done)
* Instead of using shallots we used a white onion
* Left out the green onion
* Left out the lime juice (just forgot it 😊)
* Left out the cilantro

Ever since we got an Instant Pot, we have been trying new recipes. Tonight we tried another one. Instant Pot Stroganoff. I made a few changes, as we are vegetarian, but over all it was delicious. Below is the link to the recipe.
