🥗🌈 Rainbow Poke Bowl by realizing_fitness

Save to try this tofu poke bowl! It's tasty, easy and easily customized to your liking. 💚

​✨ 𝒔𝒂𝒗𝒆 𝒂𝒏𝒅 𝒕𝒓𝒚 ✨
​⁣Serves 4⁣
​⁣the tofu:⁣
⁣1 block extra firm tofu, pressed and cubed⁣
⁣2 tbsp tamari⁣
⁣1 tbsp rice vinegar⁣
⁣1 tbsp maple syrup⁣
⁣1 tsp ginger, grated⁣
⁣1 tsp garlic, minced⁣
⁣1 tbsp hoisin sauce ⁣
⁣2 tbsp neutral oil of choice, for frying⁣
⁣⁣
⁣Combine all ingredients in a small bowl, except for tofu. Pour over tofu and toss to coat. Marinate for 30+ minutes in the fridge, covered. ⁣
⁣⁣
⁣Heat oil in a frying pan and fry tofu until golden and crispy on all sides. ⁣
⁣⁣
⁣the watermelon “tuna”:⁣
⁣⁣400g watermelon, cubed⁣⁣
⁣⁣2-4tbsp liquid aminos⁣⁣
⁣⁣1 lime, juiced⁣⁣
⁣⁣3 clove garlic, minced⁣⁣
⁣⁣3 tsp sesame oil⁣⁣
⁣⁣2 tbsp mirin⁣⁣
⁣2 sheets of nori, but into small, thin strips⁣
⁣⁣⁣⁣
⁣⁣Combine all ingredients in a small sealable container. Refrigerate for an hour or overnight, if you want. ⁣⁣
⁣⁣⁣⁣
⁣⁣Place watermelon (reserving marinade for later) on a lined baking tray and roast for 1.5 hours at 300. Check on them and rotate every so often. ⁣
⁣⁣
⁣the other ingredients:⁣
⁣4 servings cooked rice of choice ⁣
⁣1/2 small red cabbage, shredded⁣
⁣1 small cucumber, sliced ⁣
⁣2 carrots, julienned⁣
⁣4 spring onions, sliced⁣
⁣sesame seeds⁣
⁣4 tbsp vegan sriracha mayo ⁣
⁣⁣
⁣In your favorite bowl, add your raw veggies, tofu and watermelon “tuna.” Top with a sprinkle of sesame seeds and green onion. Drizzle with vegan sriracha mayo and enjoy!⁣

Oven-roasted baby potatoes with spinach, roasted garlic, grape tomatoes and an umami tahini dressing 💜

Recipe:

I roasted the potatoes & 4 whole garlic cloves in a preheated oven at 425F for 30 min (I coated them with olive oil and added a pinch of pink Himalayan salt, garlic powder and ground pepper). The spinach is chopped fresh baby spinach cooked for just 2-3 min in a non-stick pan over medium-high heat. The dressing is 1 tbsp tahini mixed with 1 1/2 tbsp nutritional yeast, 1 tsp umami seasoning sauce and 2 tbsp water (I usually start with 1 tbsp water and then add more if need be depending on the consistency of the tahini). Served everything in a bowl with halved grape tomatoes (Tip: store your grape tomatoes at room temp)..

Ginger Apple Pecan Porridge 🎄⁣

⁣This cozy, festive bowl features warm vanilla maple oats topped with ginger molasses cookies crumbles, sliced apples, tart cranberry slices, pomegranate seeds and toasted pecans. ⁣
⁣⁣
⁣Here’s how to make it:⁣
⁣⁣⁣⁣⁣
⁣𝗧𝗛𝗘 𝗣𝗢𝗥𝗥𝗜𝗗𝗚𝗘:⁣⁣⁣⁣
⁣⁣⁣⁣45g oats⁣⁣⁣⁣
⁣⁣⁣⁣1 tbsp maple syrup ⁣⁣⁣⁣
⁣⁣⁣⁣1/2 tsp vanilla ⁣⁣⁣⁣⁣
⁣⁣⁣pinch sea salt⁣⁣⁣
⁣⁣⁣⁣water⁣⁣⁣⁣⁣
⁣⁣⁣⁣a splash of unsweetened vanilla oat milk⁣⁣⁣⁣

⁣⁣⁣⁣Cook oats with maple syrup, sea salt and water until they reach desired consistency. Remove from heat. ⁣⁣⁣⁣

⁣cranberries, sliced⁣
⁣a few toasted pecan halves⁣
