Hi friends! It’s been a while since I’ve shared anything and an update is long overdue! If you read to the end, you really do care 😂

So the last couple of years I’ve been struggling with long covid, as a lot of you know. It sparked a myriad of health issues, including brain damage, nerve damage, chronic fatigue, heart problems, seizures, weight gain, and so much more. It hasn’t been easy. Many days I couldn’t get out of bed and could barely care for myself. One day I got lost trying to drive home because of a small detour. Some days I didn’t know my name and birthday. I’m so grateful for an amazing husband who has been with me through it all, and so many friends and family members who have provided prayers, support and encouragement. You know who you are 💜

Many grew tired of seeing my struggles or me saying I couldn’t participate in something due to my health. And I get it. It’s not easy to see all the time, let alone live through it. It’s exhausting. So many doctors with no answers, so many ER visits and more trauma. Spending out of pocket max on healthcare with no solutions. Taking over 50 pills a day between prescriptions and supplements praying something will be “the cure.” Being physically unable to move but look and see all the things you need to do, wish you could do. It takes a huge toll on one’s mental health. It’s easy to be overcome with depression and despair.

I don’t where I would be without my God. He is bigger than any mountain and bigger than my problems. And I know He is taking care of me and working it all out for my good. And He will use my testimony to encourage and bless others that need it.

I have learned how to fight for myself. How to be my own best advocate. About root cause issues, and how to work within yourself to heal. I’ve always been an independent person. One who pushes through when times get tough and I fight my way to the goal. But now I’ve had to relearn and rethink everything. No longer can I push through. Even when I push just a little too far, I can be knocked back into the bed for days.

So now my focus is on balance. Quality. Rest. I am learning to spend my time oh so wisely. To pay attention to what really matters at the end of the day. I don’t always get it right (ok most of the time I don’t) but I get a little better at it every day. I’m not always grateful for what I’ve been through, but I’m grateful for what I’ve learned. And for what I choose to become and to do with that knowledge.

What matters is I have not given up. I was reminded the other day, when I was most discouraged, at how far I have really come. And I’m so grateful for that. I do my best to persist with perseverance and positivity. With grit and grace. Some days take more grit than grace 😂

I had to leave a day job I absolutely loved and take one I absolutely hate, but I’m thankful it allowed me enough flexibility to work from home so I could move closer to family. With that, I’m a little (lot) late to announce we are officially moved back to Kentucky!! It took a lot out of me and still struggle with daily balance to get the house in order, but I’m getting there. It’s such a blessing to be near our support system again. I will forever be grateful for my time in Texas and the forever friends I’ve met there. I miss you all so much!

I have a side gig I intend to one day make my main gig now that my day job is no longer serving me well and has taken its own toll on my health. I’d love your support with that! Just shoot me a message to ask me how.

I am so proud to say now that I have so few bedridden days now, which is a huge success! I’m learning to celebrate wins every day, no matter how small they are. I’m working to reconnect with people again and would love to hear from you. My capacity to communicate had been diminished almost completely, but has increased so much along with my healing.

Oh and Saturdays are for puppy snuggles and self-care 🥰

Super delicious easy breakfast! Organic, nitrate free heirloom sausage, pasture raised eggs, a sprinkle of cheese, some cilantro, avocado, and a little salsa. The sausage was prepped ahead so this took about ten minutes!

It’s a little rough but I’m trying to get myself back out there and over the stage fright! I’d love to hear your tips on how you manage survival mode.

Balanced eating doesn’t have to be hard!!

This took me about 15 minutes from start to finish, including chopping the veggies and cleanup. In one skillet I put a generous drizzle of avocado oil and added some purple onion and red bell pepper. Then added bite sized broccoli pieces and a little water. Put on the lid so it can cook and steam. In another pan I added a little melted Irish butter, then 2 pasture raised eggs and 2 egg whites (adds more protein before you get too full). Once everything is cooked add 1/4-1/2 avocado and kimchi or fermented veggie of choice (such as sauerkraut). This has tons of nutrients, fiber, protein, the right amount of healthy fat, and probiotics. You’ll feel so satisfied and have even energy throughout the day.

Happy Friday eve everyone! I’ve been on a bit of a break while juggling health and a new job. I’ll be posting an update soon!
In the meantime, take a moment on this last day of November to focus on not only what you’re grateful for but what you measure your success by. Are you prioritizing those things that mean the most to you ? If not , make some time this weekend to set your intentions and focus more on the things that matter the most to you. It’s one of the most important forms of self-care 💜
