THIS IS POTENTIALLY HUGE NEWS!

Illinois has just passed a state law (unanimously!) that requires all food handlers to receive training on Celiac disease and safe handling of gluten-free foods.

The training will include learning about celiac disease, how to handle gluten free foods, how to properly clean to avoid gluten cross contamination and understand gluten free product labeling.

Goes into effect January 1.

How will it be enforced?
Will other states follow suit?

Time will tell, but today...we celebrate!!!

It is my pleasure to introduce you to the new primary admin for Celiac Collective Katy Archuleta!

A little bit about Katy:

I am a Denver native and I grew up in North Denver.
I have three of fur babies and me and my partner are recently engaged!

I know many of us can relate to this statement, but I am actually the only one in my family that has celiac disease . I got diagnosed in 2018 and have been strictly gluten-free since. I am also a huge advocate for clean eating because I also have a dairy Intolerance, I am also low fat because I do not have a gallbladder.

I’m very excited to help guide new and old faces in this group in their health struggles as well with this disease and to be an advocate for those around us.
I’m so excited to meet you all and to support this community!

Our ROCK program coordinator shares her story of her son’s celiac disease diagnosis at the age of 14 months! The before and after photos of just going gluten free after 3 months for Nick in this video really show how ingesting gluten for someone with Celiac Disease severely impacts your overall health, appearance, and quality of life. Hello everyone! Its time to hand of the torch of this Instagram page and Facebook group to a leader and advocate in the Denver/Gluten Free Community. Looking for a new primary Admin to take over the Instagram page, monthly or bi-monthly local meet ups, and monitor the private Facebook Group! I would say no more than one hour a week is required to keep this group active and operating! Please DM me if you are interested.

Join Celiac Collective for our monthly meet up in February on Saturday the 22nd from 5:30 PM to 7:30 PM at SMB. Their menu is 99% gluten-free and their kitchen is Celiac safe. What more could you ask for? Well, if you also have dairy restrictions, they can accommodate for that as well! If you plan on attending, please mark yourself as going on this event page.

***Please note, if you mark yourself as going, we expect that you will be attending. The restaurant cannot seat us unless our entire party is present. We have had too many no shows of folks in the past saying they are going and then not show up, so it is integral that if you mark yourself as going, you plan on attending so that we can continue to keep positive relationships with gluten-free restaurants/establishments.***

Hello everyone! Join Celiac Collective for a Christmas Cookie Exchange at Aurora’s new Cidery, Vanishing West Cider in on 12/21 from 3-5PM!

RSVP to this event if you plan on attending! Everyone must plan on bringing at least 2 dozen cookies to share with others! There will be many cookies to share. Please post in the discussion group and list the type of cookie you plan to bring so we avoid duplicates if possible!

We ask that you take a picture of all labels of ingredients used to make each cookie. Please keep in mind that folks with Celiac Disease will be consuming these cookies, so it is important that you are able to answer questions about cookie ingredients and how you prepared your cookies.

Join Celiac Collective this Saturday 10/26 for breakfast from 10:30-11:30 AM! We will be joining with local Denver Celiac community members after they participate in the virtual 5K for but are meeting up as a local group in person to run at Central Park!
