So many amazing vegan treats in Munich, Germany! It’s interesting to see the changes just over the past few years— we were last here in 2017 and noticed a lot of gluten free options, but hardly any vegan. Now there are completely plant-based restaurants and most bakeries & eateries offer many delicious vegan pastries and dishes. YUM. ❤️

Yours truly quoted in this article! There are some pretty good vegan protein bars for when you’re in a pinch, but I stand by my opinion that most protein bars are unnecessary & full of sugar.

One of my favorite fall treats... nothing beats a tart, crispy-sweet apple! I love eating them plain, but I also enjoy them with peanut butter, making apple crisp & adding them to pancakes and oatmeal.

Simple Apple Crisp:

4-5 cups tart apples, peeled & sliced
1/4-1/2 cup sugar, sprinkled over the apples
Juice & zest of 1 lemon (or orange, I didn't have a lemon last time & this was delish)
1/2 cup rolled oats
1/3-1/2 cup ww flour
1/2 cup chopped pecans or walnuts
1 t. cinnamon (+ 1/2 t. cardamom or nutmeg, if you like)
3 T earth balance or coconut oil

Directions:
1) Heat oven to 350. Grease pan for the crisp.
2) In a medium bowl, mix peeled and sliced apples, then sprinkle with sugar and lemon juice, stir to coat. Put apples in prepared baking dish.
3) In separate bowl add the dry ingredients together, then cut in the margarine or coconut oil to make the crumbly top. Press oat mixture on top of the apples & bake for 30-40 minutes or until bubbly.
4) Enjoy with Oat-Ly vanilla ice cream or coconut whipped cream. 🥰
