It’s super delicious and fantastic for lunches during the week—tangy from the pickles, lots of textures, and if you don’t like mayo, just swap it for greek yogurt. I like to eat it straight from the bowl, in sandwiches, on romaine lettuce leaves, or on a rice cake for crunch!⁣

To make this, you can boil and peel eggs the traditional way, but I think it’s a pain in the a**, so this no-peel method is the way to go. Add eggs to a greased loaf pan. Place the loaf pan in a larger baking dish and fill the larger dish with water, up until the level of the eggs. Bake at 350 for 30 minutes. Once cooled, flip the loaf pan over and chop the eggs.⁣
⁣
8 eggs⁣
¼ cup red onion, finely diced⁣
1/4 cup parsley, finely chopped⁣
1/4 cup chives, finely chopped⁣
4 pickles, chopped⁣
1/2 cup mayo or greek yogurt⁣
1 tb dijon mustard⁣
1 tsp salt & 1 tsp ground black pepper⁣
⁣

Once eggs have cooled and you’ve mashed them, add to a large bowl, along with the red onion, parsley, chives, pickles, mayo, mustard, salt and pepper. Mix well to coat, taste and adjust seasonings as needed. ENJOY!⁣
