Sap season is winding down but there is still lots to do! Collecting, boiling, straining, boiling again, canning - and that’s not even including all the clean up! Pretty soon we will be taking out taps, but I still wanted to share a bit about how much it really takes to take sap and turn it into syrup.

We tap mostly red maples, and for us it’s about 40 gallons of sap to get 1 gallon of syrup. This takes days of collection and boiling and is certainly a labor of love when you’re carrying by hand and boiling over a fire. It has take. Years of adjusting the process so that it fits our own personal abilities, resources, and preferences.

But I think the biggest takeaway I’d like people to get from this is that syrup does not come straight out of the tree! It’s much closer to water when it comes out of the tap and takes a lot of condensing and caramelization to get what we know as maple syrup 🍁

I made a thing! I completed a project! and I’m super happy with it 🥰 thanks for following along, even though I’ve posted about it *very* infrequently. What started as the first set of pages for a children’s book (still the end goal!) has expanded into other visions I didn’t think about until I was in the midst of the process. And we love her for that 💞

I’m inspired by those old DNR habitat posters, like the coastal dunes one that’s been hanging in our stairwell for many years. I love how the artists for those play with perspective, show multiple stages of the year/cycles, and jam-pack the panoramic view with as many critters as possible so it’s like a game of I-spy. That’s what I tried to emulate here, with my own spin on featuring 50+ of my favorite or most-encountered species in my neck a da woods. Which ones do you recognize???
